Prep time: 10 minutes
Yields: 6 servings
Cuisine: Casserole,Italian,Pasta
Number of ingredients: 7
  • 4 to 5 cups Leftover Spaghetti Sauce (I used leftover homemade beef spaghetti sauce but any kind works, such as marinara.)
  • 3 or 4 cups Leftover Pasta (Your Favorite Short Pasta)
  • 1 cup Shredded Mozarella cheese (or enough to coat the surface evenly)
  • ⅛ cup Grated/Ground Parmesan
  • ⅛ cup Italian Style Bread Crumbs
  • 1 cup Cooked Broccoli florets (or your favorite green veggie to mix in)
  • 1 to 2 tbsp Olive oil or butter (for moisture)
How to cook:
  1. Pre-heat oven to 375 degrees. In a small bowl combine bread crumbs and grated/ground parmesan cheese with a spoon and set aside. In an oven-safe casserole dish, ladle half of your leftover spaghetti sauce at the bottom to create a sauce layer.
  2. If desired, top the sauce with a thin layer of broccoli florets (or your favorite half-cooked green vegetable. It will finish cooking in the oven). Sprinkle cooked pasta over the broccoli or vegetable layer, if using. Give this layer a drizzle of olive oil or dot with bits of small cubed butter to add richness and moisture, if desired.
  3. Top the pasta with remaining leftover spaghetti sauce in an even layer to coat and cover the pasta as best as possible. Sprinkle on the shredded mozzarella cheese. Take a sheet of foil and spray it thoroughly with non-stick cooking spray such as pam. Tightly cover the casserole with the greased sheet of aluminum foil and heat through in a 375 degree oven for 25 minutes.
  4. When 25 minutes of cook time is up, remove the sheet of foil and continue cooking for another 10 minutes uncovered. Cook only until shredded mozzarella cheese is just evenly melted and juices are bubbling.
  5. Now top everything off with the parmesan cheese and bread crumb mixture you mixed together earlier. Sprinkle in an even uniform layer and turn the broiler on LOW.
  6. Brown the top cheesy parmesan crumb layer of your casserole until just golden or lightly brown and cheese is melted and bubbly. Anywhere from 3 to 5 minutes. {See notes about using the broiler below}

Total time: 20 minutes
Yields: 12 servings
Number of ingredients: 8
  • 6 ounces dried spaghetti pasta (see note)
  • pinch salt
  • 1 1/2 tbsp olive oil
  • 1 egg (lightly beaten - optional)
  • cooking spray
  • 1 1/2 cups grated parmesan cheese (divided)
  • 1 1/2 cups pasta sauce
  • 12 cooked meatballs
How to cook:
  1. Preheat oven to 375°F. Grease a nonstick muffin pan thoroughly with cooking spray and set aside.
  2. Bring a pot of salted water to a boil over high heat.
  3. Cook the pasta for 2 minutes less than the package instructions, so it's firm to the bite.
  4. Drain the spaghetti and toss with olive oil until evenly coated. (Optional: add beaten egg, which will help the nests hold together after baking.)
  5. Chill for 15 minutes.
  6. Add 1 cup parmesan cheese and toss until evenly coated.
  7. Grab a small handful of spaghetti and arrange into each muffin cup, pressing down to make a nest shape.
  8. Spoon 1 tbsp pasta sauce onto each cup, and then add one meatball followed by another 1 tbsp pasta sauce. Repeat for remaining cups.
  9. Sprinkle remaining parmesan cheese over the tops of meatballs.
  10. Bake for 20-25 minutes.
  11. Remove from the oven and cool slightly. (If you take them out while hot, they may collapse)
  12. Garnish with optional chopped basil. Serve warm and enjoy
