  • 16 ounces guittard dark chocolate (melting chocolate)
  • 3/4 cup heavy whipping cream
  • 1 1/2 teaspoons madagascar vanilla extract (no water added)

How to cook:
  1. In a microwave safe bowl, melt Guittard chocolate according to package directions.
  2. Once apeels have melted, add half of the whipping cream; stir thoroughly.
  3. Add remaining whipping cream; stir.
  4. Add extract; stir until ingredients are completely mixed, cover.
  5. Allow ganache to harden at room temperature (about 2 hours).
  6. Using truffle scoop, scoop out ganache and hand roll into 1 to 1 1/2 inch balls.
  7. Outer Coating 1 lb. (1 and 1/4 bags) dark chocolate In a microwave safe bowl, melt chocolate according to package directions.
  8. Working rapidly, drop ganache center into melted chocolate.
  9. Cover entire truffle center.
  10. Lift out dipping tool.
  11. Remove excess chocolate by tapping truffle on the bowl and place it on a cookie sheet lined with wax paper.
  12. Put truffles in the refrigerator for a shiny outer coating.
  13. Fill 2 oz. squeeze bottle with the white melted chocolate. Drizzle over truffles in a crossing pattern. Once dried, place truffles in Truffle Cups.

Easy Christmas Truffle Recipe
This easy Christmas Truffle Recipe is fantastic to do with the kids. They love the surprise inside as much as they love making and eating them!

  • 16 oz white chocolate chips
  • 1 cup heavy cream
  • 2 tbsp unsalted butter
  • red and green food colouring
  • flavour extracts (peppermint and orange)
  • 16 oz white dipping candy buttons
  • candy sprinkles
How to cook:
  1. In a small saucepan bring the cream to a simmer. Add butter and melt stirring all the time.
  2. Once melted, remove the pan from the heat and add chocolate chips. Stir until melted and smooth.
  3. Divide equally into 2 of the small dishes. Add a couple of drops of green food colour into one with a couple of drops of peppermint flavoring. To the other bowl add a couple of drops of red food colouring and a few drops of orange flavouring. Mix well. If desired add a bit more food colouring until desired colours are achieved.
  4. Freeze for at least two hours until firm.
  5. Using a melon baller scoop rounds about 1 inch in diameter from the truffle mixture.
  6. Freeze in an airtight container until firm. It’s easiest to leave overnight or at least a few hours.
  7. Melt dipping candy in a microwave safe bowl. Melt in 30 second intervals, stirring between each, until they are melted and smooth.
  8. Carefully take a truffle and using two spoons dip it into the melted candy, lift out and let drain for a few seconds before placing it on a parchment lined tray. Repeat until all the truffles are coated. Sprinkle with candy sprinkles if desired.
  9. Refreeze until ready for eating.

  • 1 box No-Bake Oreo Cheesecake dessert
  • chocolate chips (melted)
  • sprinkles, candy eyeballs, or other toppings
How to cook:
  1. First, make and freeze a No-Bake Oreo Cheesecake or any boxed no-bake dessert that you can find at your local grocery store. Up to you. Choose your own adventure here.
  2. Next, melt some chocolate chips with 2 teaspoons of oil (olive or canola is great) in a microwave-safe bowl in the microwave. Do this on high in 30 second increments, stirring in between, just until it’s melted (1 1/2 to 2 minutes total usually).
  3. Now you can use a melon baller to scoop small spheres of frozen cheesecake and cover in chocolate. Then add your sprinkles, chopped nuts or a little sea salt.
  4. Once the chocolate sets, I like to place my truffles in mini cupcake liners for a pretty presentation and to keep them from sticking to each other. Store these in the refrigerator for up to a few days or you can freeze them.
