  • 1 pound mushrooms (20 pieces)
  • 2 tablespoons cream cheese (softened)
  • 1 tablespoon butter (softened)
  • 1 tablespoon fresh parsley (finely chopped)
  • 3 cloves garlic (crushed)
  • 3/4 cup cheddar cheese (shredded)
  • 1/4-1/2 teaspoon salt
  • 1/4 teaspoon pepper (ground)

How to cook:
  1. Preheat your oven to 200C/390F. Prepare a cookie sheet and line with parchment paper, set aside.
  2. Remove the stalk from the mushrooms and peel the skins. Leaving the skin on can cause your mushrooms to become rubbery.
  3. In a mixing bowl, add the cream cheese, butter, parsley, and garlic and mix well.
  4. Add in the remaining ingredients and mix.
  5. Place the prepared mushrooms on your cookie sheet and fill with the cheese mixture.
  6. Place in the oven and bake for 15 minutes, until the cheese has browned and the mushrooms are cooked through.
  7. Serve immediately.

  • 1 pound Spicy Ground Sausage
  • 2 ounces Diced Pancetta
  • 2 tablespoons Parsley
  • 2 tablespoons Dijon Mustard
  • 1/4 cup Pork Panko
  • 3 ounces Parmesan Cheese

How to cook:
  1. Whipe down mushrooms with a wet paper towel or rag.

  4. Drain the grease and set the sausage to the side in a medium mixing bowl.
  5. In the same sauce pan, add the pancetta and brown for 5 to 7 minutes on medium heat. Until golden brown.
  6. For the last two minutes of browning the pancetta, add the chopped stems of the mushrooms.
  7. Soak up the excess oil with a paper towel in the pan and add the pancetta to the mixing bowl with the spicy ground sausage.
  8. Add the remaining ingredients to the medium mixing bowl - 2 tablespoons parsley, 2 tablespoons dijon mustard, 1/4 cup pork panko flakes, and chopped stems.
  9. Mix well.
  10. Preheat oven to 375 degrees.
  11. Line a baking sheet with foil and add your mushrooms.
  12. Add about 1 tbsp of mixture to each mushroom.
  13. Sprinkle the top with parmesan cheese.
  14. Bake for 20 minutes, let cool and enjoy!
