  • 2 1/4 cups gluten free rolled oats
  • 3 large ripe bananas (mashed)
  • 1 egg
  • 1 teaspoon cinnamon (optional)
  • 1/2 cup chopped walnuts ((optional))
  • 1/2 cup chocolate chips of choice ((optional))

How to cook:
  1. Preheat the oven to 350F. Line a large cookie sheet with parchment paper and set aside.
  2. In a large mixing bowl, add all ingredients and stir to combine with a rubber spatula or wooden spoon. Add the cinnamon, walnuts or chocolate chips if desired and stir well again.
  3. Use 1/3 cup measuring cup to scoop out mixture and place on prepared baking sheet. You should get about 9 large cookies. Gently flatten with the back of the measuring cup. Cookies won't spread in the oven. Bake for 18-20 minutes, or until set. Allow to cool on the baking sheet or on a cooling rack.
