  • 8.8 oz Cream Cheese (equivalent to 1 block of cream cheese)
  • 1/3 cup Almond Butter (or peanut butter)
  • 1/3 cup Sugar-free Powdered Sweetener (not crystal)
  • 1 teaspoon Vanilla Extract
  • 2 tablespoon Peanut Butter
  • 2 tablespoon Crushed Peanuts (or crushed almonds)

How to cook:
  1. Line a plate with parchment paper. Slightly oil with coconut oil. Set aside.
  2. In a large mixing bowl, add cold cream cheese, almond butter, and vanilla extract if used. Using an electric beater, beat for 30-45 seconds until it forms a thick consistent batter.
  3. Stop the beater, and add the powdered erythritol.
  4. Beat again until well incorporated - the batter should be thick, and that's ok.
  5. Scoop one tablespoon of fat bomb batter, place it in lightly oiled hands, and roll the batter into a ball, then place it on the prepared tray. You can also place the batter into small silicone molds if preferred.
  6. Optional: drizzle extra almond butter on top or roll into crushed almonds or peanuts to decorate.
  7. Freeze until set - it takes about 1 hour. Eat frozen or keep 10 minutes at room temperature for a softer texture. The fat bombs soften in the fridge and are better kept in the freezer.
