- 1 pound boneless, skinless chicken thighs
- 1/2 cup all-purpose flour
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1 teaspoon paprika
- salt and black pepper to taste
- 2 eggs (whisked)
- 1 cup panko breadcrumbs
- 1/2 cup buffalo sauce
- 4 brioche or burger buns
- 1 tomato (sliced)
- green leaf or romaine lettuce

- Preheat air fryer or oven to 375 degrees F.
- Set up an assembly line: combine flour in a medium-sized bowl with the spices and mix to combine. Whisk eggs in a separate bowl and add breadcrumbs to their own medium-sized bowl.
- Dip a piece of chicken in the flour mixture until it is coated on all sides, then dip the chicken in the egg bowl, again coating on all sides. Finally, dip the piece of chicken in the breadcrumbs and press down until it is fully coated. Transfer to a plate, then repeat the process with the remaining pieces of chicken.
- Add chicken to air fryer basket and spray lightly with cooking oil. Cook for 15 minutes, flip the chicken and cook for another 10-15 minutes until the internal temperature reaches 165 degrees F. Cooking time will depend on your individual air fryer.
- Remove the chicken from the air fryer and put in a large bowl. Pour buffalo sauce on top and toss with tongs to coat the chicken.
- Heat or toast the buns to your liking. Assemble the sandwiches by adding lettuce, tomato and chicken to the buns.
- Serve with your favorite fries and a salad and enjoy!

- Mix the buffalo sauce with paprika and onion powder.
- Coat the chicken with the sauce.
- Preheat Air Fryer to 350F / 180C.
- Add the chicken breast to the air fryer and cook for 14 minutes turning halfway through.
- In a small bowl, make the buffalo mayo by mixing together mayonnaise, buffalo sauce, and seasonings of choice (if using).
- Assemble the sandwiches using the buns, buffalo chicken, buffalo mayo, onion, lettuce, and tomato.

- Lightly brush the chicken breast fillets with olive oil.

- Take your thin sliced chicken breast and cut in half to make smaller pieces. If you don't have thin chicken breast, slice them through the middle as you would a bagel adn then using meat mallet pound them thinnner. Then cut each piece in half. I got 10 smaller pieces from 1 lb of thin sliced chicken breast.
- Get two shallow bowls. Place mayo and water in 1 bowl and mix to thin the mayonnaise. In the otther bowl mix the pork bread crums and parmesan cheese.
- Spray the basket of the air fryer and set aside. Take each piece of chicken and dip in the mayonnaise mixture to coat and then into the bread crumb mixture. Coat both sides and then place into the air fryer. Do not overlap the chicken. You might have to do batches.
- Set the air fryer to 380°F and bake the chicken for 10 minutes. Then turn the heat up to 400°F for 5 minutes.
- When done, add a few spoonfuls of the buffalo sauce ontop and eat with a lettuce bun for a keto sandwich or slice and place over salad with ranch or blue cheese dressing.
