Ingredients:
  • 2 boneless, skinless chicken breasts (Mine were 6-8oz each.)
  • 1 cup pickle juice
  • 1/2 cup buttermilk (See notes below for how to substitute buttermilk.)
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1 teaspoon salt (Adjust to taste.)
  • 1/4 teaspoon pepper (Adjust to taste.)
  • 1 tablespoon Powdered/Confectioner's Sugar or Sweetener
  • 1 teaspoon cayenne pepper (Optional for the spicy chicken sandwich)
  • 1 egg (beaten)
  • cooking oil (I used peanut oil)
  • 2 buns (I use brioche.)
  • 4 slices dill pickle chips
  • 2 slices leaf lettuce (Optional for deluxe sandwich.)
  • 4 slices fresh tomatoes (Optional for deluxe sandwich.)
  • 1/4 cup mayo
  • 2 tablespoons honey
  • 2 teaspoons BBQ Sauce (hickory smoked)
  • 2 teaspoons Dijon mustard
  • 1 teaspoon yellow mustard
  • 1/2 teaspoon xanthan gum (See substitution in the notes below.)

How to cook:
  1. You can use a sealable bag or a large bowl to brine the chicken. Add the chicken breasts to the bowl or sealable bag along with the pickle juice and buttermilk. Refrigerate for 30 minutes.
  2. Add the flour, paprika, garlic powder, salt, pepper, and sweetener to a large bowl, large enough to dredge the chicken. Stir to combine.
  3. Add the egg to a bowl large enough to dredge the chicken.
  4. Spray the air fryer basket with cooking oil.
  5. Remove the chicken from the marinade and dredge both breasts in the beaten egg and then the flour. Place the chicken in the air fryer basket. (The use of the egg is optional and will help keep the breading intact on your sandwich. I often make this without using the egg).
  6. Spritz the top of the chicken with peanut oil. Spray from a distance.
  7. Air fry on 400 degrees for 15 minutes.
  8. Open the air fryer and flip the chicken. Be careful with tongs. You don't want to lose any of the breading on the chicken. Your chicken may be fully cooked at this point and you may only need a couple of minutes to crisp this side of the chicken. Spritz this side of the chicken.
  9. Air fry for an additional 5-7 minutes until the chicken is crisp. You should also use a meat thermometer to ensure the chicken has reached an internal temperature of at least 165 degrees.
  10. Every air fryer model and brand will cook at varying speeds. Monitor your results carefully, and adjust as needed.
  11. For toasted buns, toast the buns for 3-4 minutes on 400 degrees.
  12. Remove the chicken from the air fryer and assemble the sandwich.
  13. Chick-fil-A Sauce
  14. Combine the mayo, honey, BBQ sauce, and mustard in a bowl. (I often omit the mayo and still love the flavor. Feel free to adjust the ingredients to fit your taste).
  15. Add the xanthan gum to a separate bowl along with 2 teaspoons of the sauce. Stir to thicken and add it to the bowl with the sauce.
  16. Stir to thicken.

  • 2 pounds boneless skinless chicken breasts (chopped into bite size pieces)
  • ½ cup dill pickle juice
  • 2 teaspoons garlic powder

How to cook:
  1. Marinate
  2. Cut chicken breasts into bite-size pieces and add to a bowl with milk and pickle juice. Mix well, then cover and place in the refrigerator for 30 minutes up to overnight to ensure the chicken is well-marinated.
  3. Mix
  4. Once chicken is done marinating, whisk 2 eggs and add to the bowl with the chicken. Mix well.
  5. Shake
  6. Preheat your air fryer to 375°F. In a zip-lock bag, combine flour, powdered sugar, salt, pepper, garlic powder, and paprika. Shake the bag to mix well.
  7. Coat
  8. Using a slotted spoon, spoon half of your chicken into the zip-lock bag. Shake well until chicken is fully coated. Using a separate, dry slotted spoon, remove the coated chicken and place to the side. Repeat with the second half of the chicken until all chicken is fully coated.
  9. Spray air fryer tray with olive oil and place chicken inside. Spray the chicken with oil after placing.
  10. Serve
  11. Air fry for 5-6 minutes until the chicken is golden brown and crispy on the outside. Serve and enjoy!

  • 2 Chicken Breasts Boneless/Skinless (pounded)
  • 1/2 cup Dill Pickle Juice
  • 2 Eggs

How to cook:
  1. Place chicken into a Ziploc Baggie and pound, so that the whole piece is the same thickness, about 1/2 inch thick.
  2. Cut chicken into two or three pieces (depending on size). Each piece should be a bit bigger than your buns.
  3. Place pieces of chicken back into Ziploc baggie and pour in pickle juice. Marinate in the refrigerator for at least 30 minutes.
  4. In a medium bowl, beat egg with the milk. In another bowl, combine flour, potato starch, baking powder and all spices.
  5. Using tongs, coat chicken with egg mixture and then into flour mixture, making sure pieces are completely coated. Shake off excess flour (this is important).
  6. Spray the basket of your air fryer with Oil and place chicken into air fryer and spray the chicken with oil.
  7. Cook at 340 degrees for 6 minutes. Using silicone tongs, carefully flip the chicken and spray with oil. Cook for 6 more minutes.
  8. Raise the temperature to 400 degrees and cook for two minutes on each side.
  9. Serve on buttered and toasted buns, with 2 pickle chips and a small dollop of mayonnaise, if desired.

  • 1/2 cup dill pickle juice (leftover liquid in pickle jar)
  • 1 large egg
  • 1/4 cup buttermilk (see body of post re: how to make buttermilk)

How to cook:
  1. Prepping the chicken:
  2. If your chicken breasts are extra thick in the middle, pound them to an even thickness so they cook evenly. Place them in a gallon size zip top bag, remove most of the air then pound the thickest part a few times using a meat mallet, rolling pin or even a wine bottle!
  3. Add the dill pickle juice to the zip top bag then seal and refrigerate 15-20 minutes.
  4. Dredging station:
  5. Bowl #1: Whisk the egg and buttermilk together. (see body of post for How to Make Buttermilk if don't have any). Bowl #2: Combine the flour, garlic powder, paprika, salt, pepper, corn starch and powdered sugar.
  6. Remove the chicken from the refrigerator, drain and discard the pickle juice.Dredge the chicken in the flour mixture shaking off excess. Next dip the chicken into the egg mixture letting it drip off then back into the flour gently pressing to make sure it’s completely coated. Basically: flour, egg, flour.
  7. Air frying:
  8. Preheat the air fryer to 400° then spray the air fryer basket with cooking spray.Place the chicken in the air fryer basket then spray the top of each breast with cooking spray.
  9. Air fry 10 minutes then carefully turn them over. Spray any exposed flour spots then continue air frying 2-4 more minutes or until the internal temp of the chicken is 165° on a meat thermometer. Cook times vary with air fryer models so adjust as necessary.
  10. Assembly:
  11. To toast your buns (optional), place them face down in the air fryer at 400° for 2-3 minutes or until lightly golden.Remove the buns from the air fryer and assemble the sandwich with your favorite toppings - lettuce, tomato, pickle chips and a slather of sauce.
  12. Chick-fil-A Sauce:
  13. Whisk the ingredients together in a small bowl until smooth. Slather on your sandwich or serve as a side for dipping.
