- 2 tablespoons olive oil or spray
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- salt and pepper to taste

- Start by adding salt, pepper, ground cumin, and smoked paprika to your chicken thighs, rub it in with your hands.

- 2 lb chicken thighs, bone-in with skin
- 1 Tbsp olive oil
- 2 Tbsp chicken dry rub (homemade below or use store bought)
- CHICKEN RUB
- 1 Tbsp garlic powder
- 1 Tbsp ground onion powder
- 1 Tbsp smoked paprika
- 1 Tbsp cumin
- 1 Tbsp chili powder
- 2 Tbsp sea salt or coarse kosher salt
- 1 Tbsp ground black pepper
- 2 tsp brown sugar
- 1/2 tsp cayenne pepper
How to cook:
- Preheat the air fryer at 400F for 5 minutes.
- Trim the chicken thighs of excess fat and skin. Blot the chicken dry with paper towels.
- If you're making the homemade chicken rub, mix all of the ingredients together in a small bowl. This makes more than the recipe needs but you'll be all set for your next few dinners! Your favorite grocery store rub will work as well!
- In a bowl drizzle the olive oil over both sides of the chicken and sprinkle evenly on both sides with the chicken rub.
- With the skin side down, air fry the bone-in chicken thighs for 8 minutes and then flip the chicken over. Continue cooking for about 7-8 minutes until the internal temperature of the chicken is 165F. While our chicken took about 16 minutes total to cook, it could take up to 20 minutes depending on your air fryer model.

- Use a paper towel to pat the chicken thighs dry. This is to remove excess moisture from them.
- Add the paprika, oregano, thyme, parsley, black pepper, garlic powder, soy sauce, lemon juice, olive oil, and salt in a small bowl. Mix till well combined.
- Add the marinade to the chicken thighs and rub it in to make sure that all parts of the chicken are coated in the marinade. Cover the chicken and put it in the fridge to marinate for 1- 4 hours. You can marinate it overnight but it should not exceed 48 hours.

How to cook:
- Preheat your air fryer to 380° F. Set cook time for 24 minutes with turn notification if your air fryer has that option.
- While your air fryer is preheating, prep your rub.
- Once the air fryer is preheated add the parchment paper or spray with nonstick cooking spray.
- Place chicken skin side up in air fryer. Sprinkle with seasoning rub on top of chicken. Cook 12 minutes.
- Then flip the chicken thighs and add seasoning to that side. Cook for another 12 minutes.
- Check that the internal chicken temperature is at least 165° F.
- Let chicken rest 5 minutes before serving.
