- Preheat air fryer to 360º F for 5 minutes
- Cut off and discard both ends of the eggplant and slice the eggplant in rounds.
- Combine the oil and seasoning in a large bowl until well combined, and toss the eggplant until well coated.
- Place the eggplant slices in the air fryer basket in a single layer and air fry to 360º F for 8-10 minutes or until the eggplant is soft and golden brown.
- Top the slices with 1 tablespoon marinara sauce and 1 tablespoon mozzarella cheese and sprinkle them with parmesan cheese. Cook for another 2 minutes, or until the cheese is melted

Ingredients:
- eggplant, sliced into 1/4 inch rounds
- salt
- olive oil
- 1/2 cup Italian seasoned bread crumb
- 1/2 cup panko
- 1/2 cup Parmesan cheese, grated (Romano may be substituted or combined for a blend)
- 1/4 cup parsley, finely chopped
- 2 teaspoons Italian seasoning
- 1/2 teaspoon pepper
- 1 teaspoon garlic powder (optional)
- 1/2 cup flour
- 2 eggs, beaten
How to cook:
- Preheat air fryer to 375 degrees F.
- Cut eggplant into 1/4-1/2 inch slices. 1/4 inch for super thin eggplant slices or 1/2 for slightly thicker slices perfect for eggplant parmigiana.
- OPTIONAL STEP: Some report a creamy richer tasting eggplant when salting eggplant before cooking. Lay the eggplant on a rack over a baking sheet. Sprinkle salt on the cut sides. This will draw water out of the eggplant and reduce bitterness. After 30 minutes rinse the eggplant slices and then pat completely dry.
- In a flat bowl or large dish, mix together the Italian seasoned breadcrumb, panko, Parmesan cheese, parsley, pepper and garlic powder (optional). Set next to your flour and beaten egg bowls. The dredging station order should be flour, then egg then breadcrumb.
- Dip eggplant slices into flour, shaking off excess. Then dip into egg, coating both sides allowing excess to drip off. Then press the eggplant slices into the breadcrumb mixture, coating both sides. Set on a plate or rack and repeat until all the slices are coated.
- Cooking in batches, spray or drizzle olive oil on both sides of the eggplant slices before adding to the air-fryer basket.
- Cook for 10 minutes total, 5 minutes on each side, until golden brown. Set on a baking sheet or rack and continue cooking the rest. You may keep them in a warm oven if you like.NOTE: All Air-Fryers cook differently. You may want to adjust your cooking time or temperature after the first batch.
- SERVING SUGGESTIONS: Season with a little salt if desired. Serve alongside your favorite dipping sauce like marinara, harissa, tzatziki or serve over salad or pasta. These eggplant slices can also be used to for eggplant parmigiana. Enjoy!

- Start off by making the herb oil.
- Combine the olive oil along with the red wine and season it with italian seasoning, garlic powder, black pepper and salt.
- Lay the eggplant in a single layer. Brush both sides with the herb oil.
- Place a single layer of sliced eggplant in the air fryer.
- Layer with another layer of eggplant. Continue the pattern in single layers.
- Cook the eggplant on air fry at 375F for 8 minutes till the eggplant is tender.
- Remove the eggplant from the air fryer and start building.
- The easiest way to make an eggplant stack is by placing a single layer at the bottom of the air fryer.
- Place 1-2Tb of marinara followed by 1-2 tablespoons of shredded cheese. Top with another slice of cooked eggplant and repeat the process. FInish the top layer with parmesan cheese.
- Cook under air fry at 375F for 5 minutes till the cheese is melted and bubbly.
