- Kosher salt
- Freshly ground black pepper
- 1/2 c. all-purpose flour
- 1 large egg, beaten
- 2 c. panko bread crumbs
- 1 tsp. Old Bay seasoning
- Lemon wedges, for serving
- Tartar sauce, for serving

- Pat fish dry and season on both sides with salt and pepper.
- Place flour, egg, and panko in three shallow bowls. Add Old Bay to panko and toss to combine. Working one at a time, coat fish in flour, then in egg, and finally in panko, pressing to coat.
- Working in batches, place fish in basket of air fryer and cook at 400° for 10 to 12 minutes, gently flipping halfway through, or until fish is golden and flakes easily with a fork.
- Serve with lemon wedges and tartar sauce.

- Rinse the frozen fish under cold water, then pat them dry and place them on a large plate.
- Preheat the air fryer to 350 degrees Fahrenheit.
- While you wait for the air fryer to heat, mix the salt, fine herbs, garlic powder, and pepper in a small bowl.
- Next, either lightly spray the fish with oil or rub the oil into it (on both sides). Then sprinkle the spice mixture onto the fish - on both sides if the fish doesn't have skin and only on the flesh side if there is skin. Drizzle a little bit of lemon juice on each fillet as well.
- When the air fryer is hot, add the frozen fish fillets into the air fryer tray. There should not be any overlap of the fillets.
- Cook the fillets for 12-17 minutes until fully cooked. The fillets are cooked when they are flaky - you can test this with a fork. Alternatively, the internal temperature should be 145 degrees Fahrenheit. If your fish fillet is pretty thin, there is no need to flip it during cooking. However, if your fillet is thicker, flip it after around 8 minutes of cooking. Make sure that the fish is cooked but not overcooked because then the fish will be rubbery. Cook times can vary depending on the thickness of the fillets and your air fryer so use them as guidelines only!
- Once the fish is cooked, remove the fillets from the air fryer and serve them with lemon wedges. We like eating fish with peeled potatoes boiled in salted water and a little bit of butter melted on the stovetop or in the microwave.

- 1⁄4 c (59 mL) of olive oil or 30 g (2 tbsp) of melted butter
- 8 to 10 whole whiting or fillets
- Salt and pepper to taste
- 2 tsp (8.4 g) of dried oregano
- Zest from 2 to 3 lemons
How to cook:
- Cut the fish open from the top to the tail. If the fish still have the heads and tails attached, use a sharp knife to cut them both off. Flip the fish over and cut straight down from the top to the bottom, but don’t cut all the way through. This is called butterflying a fish. Have your fishmonger gut and scale the fish before you bring it home. If you’re working with fillets, don’t worry about cutting or flattening them.
- Flatten the fish by pressing on its spine. Turn the fish over again and press down hard on the back of the fish. Spread the fish flat to turn it into one butterflied piece instead of a whole fish. Whiting are pretty small, so it’s not hard to manipulate them into the butterfly shape.
- Brush butter or olive oil onto the skin. Use 1⁄4 c (59 mL) of olive oil or 30 g (2 tbsp) of melted butter to coat the outside of each fish.
