- 2 cups rotisserie chicken cooked
- half cup salsa
- 1 cup Greek yogurt (or sour cream)
- three-quarters cup shredded cheese (optional)
- pico de gallo

- Chop rotisserie chicken into small, bite-sized pieces. Combine chicken with salsa of choice.
- Add 1/4 cup chicken mixture to the Carb Balance Flour Tortilla. Sprinkle with shredded cheese if desired. Roll tortilla tightly and spray end with a bit of cooking spray to hold seal. Repeat until you roll enough taquitos for two servings and set aside.

- Make the chicken filling. In a small mixing bowl, mix together the ingredients for the chicken taquitos.
- Make the beef taquitos. Brown the ground beef in a large pan over medium heat for 5 minutes. Pour in 2/3 cup of water and the 3 tbsp of taco seasoning. Stir and let simmer over low heat for 3 minutes. Transfer beef mixture to a mixing bowl and stir in the Mexican cheese.
- Wrap 5 tortillas in a damp paper towel and heat for 30 seconds in the microwave. Lay a warm tortilla flat and fill with 2 tbsp of either chicken filling or beef filling. Roll the tortilla tightly around the filling and place seam-side down in an oiled air fryer basket. Repeat until you can no longer fit any taquitos in the air fryer. *For the crispiest taquitos, don't let them touch in the basket.
- Spray the taquitos tightly with oil. Set the air fryer to 375°F for 10 minutes. Check taquitos at the 8 minute mark to ensure they are not burning. They will start to turn golden brown when done.
- Use tongs to remove the taquitos from the air fryer one at a time. Repeat steps 3 and 4 as many times as needed to cook all taquitos. *You'll need to work in batches depending on the size of your air fryer and how many taquitos you are cooking.
- Serve warm or at room temperature with toppings of your choice, such as salsa, sour cream, cilantro, pico de gallo, taco sauce, and crema.

- Air Fryer Instructions:
- Stack tortillas on a microwave safe plate and place a damp paper towel over them. Microwave for 20 to 25 seconds until warm. It is very important to use warm tortillas or else they will crack when rolling them.
- Mix the filling: To a medium bowl, add the chicken, cream cheese, taco seasoning, salsa, and shredded cheese. Mix together until well blended.

- The second way is to assemble the taquitos according to the recipe below without cooking them. Store in the refrigerator in an airtight container for up to 24 hours in advance. Once you are ready to eat the taquitos, cook them according to the recipe instructions below.
- Freezer Instructions:
- Prepare chicken taquitos as directed in the recipe.
- Place taquitos in a single layer, seam side down, on a parchment paper lined cookie sheet and place in the freezer for 2 or more hours until frozen.
- Once frozen, remove the taquitos from the freezer and place them in a freezer bag. Freeze for up to 3 months.
- To cook frozen taquitos, brush or spray with cooking oil and cook in a 365 F preheated air fryer for 5-7 minutes until crispy.
- To cook frozen taquitos in the oven, preheat oven to 425 F. Add frozen taquitos in a single layer to a baking or cookie sheet (line with parchment paper for an easy clean up). Brush or spray cooking oil on the taquitos and bake for 15-20 minutes until crispy.

- Preheat Air Fryer to 400 degrees.
- In a bowl mix together shredded chicken, taco seasoning, and cheese.
- Warm tortillas up either in a hot cast-iron skillet or in the microwave until malleable. Place 1 tortilla down on a flat surface and fill it with about 1/4 cup of the chicken mixture off to the side. Roll up the tortilla tightly and place it, seam side down on the air fryer basket/air fryer sheet. Continue until all of the filling has been used up.
- Lightly oil the tops of the tortillas.
- Cook in batches for 6 minutes, flipping halfway though, until the tortillas are lightly crisp and the filling is melty.
