Sweet and spicy Peach and Jalapeno Jam is delicious served with cream cheese and crackers. Sweet Georgia peaches and jalapenos in this sweet and spicy jam.

Ingredients:
  • 3 ½ lbs peaches
  • 2 medium jalapeno peppers
  • 7 ½ cups sugar
  • 1 pouch liquid pectin
  • ¼ cup lemon juice
  • 1 – 2 tablespoons butter
How to cook:
  1. Prepare the jars and lids according to package directions. I do mine by cleaning my jars well and putting them in a pan with about 4 - 5 inches water. Bring water to a boil, then reduce to a simmer until the jars are needed.
  2. Remove the skins from your peaches by putting them in a pan of boiling water. When water comes back to a boil, leave the peaches in 1 more minute. Drain pan and pour cold water over the peaches.
  3. Slice the peaches into thin slices. Chop the jalapenos into tiny pieces. Put the peaches and jalapenos in a large pot. Add sugar and lemon juice. Bring peaches to a boil. Stir often. Cook until the peaches are tender (about 30 minutes) over medium heat. If mixture foams add a tablespoon of butter, add the second tablespoon if still the peach mixture foams.
  4. When the peaches are tender, stir in the pectin. Stir in and boil for one minute.
  5. Carefully put the hot jam into the prepared jars. Leave a 1/4 inch headspace. Make sure rims are clean (wipe with a wet clean rag to be sure). Then add the lids and screw rings.
  6. Have ready a pan of boiling water that will cover the jars. Add the jars to the water. Follow the directions on the pectin package for water bath canning times.
  7. Remove jars and put on a clean kitchen towel. Listen for the lids to pop. If they don't refrigerate those jars for 3 weeks.

  • 3 ½ lbs large peaches
  • 3 medium jalapeno peppers
  • 7 ½ cups sugar
  • 1 pouch liquid pectin
  • ¼ cup lemon juice
  • 1 tablespoon butter or margarine ((cuts down on foaming))

How to cook:
  1. Prep
  2. Add the sliced peaches, chopped peppers, lemon juice and 7 1/2 cups of sugar to a large pot.
  3. Heat
  4. Turn the stove on a medium low heat.
  5. Stir the fruit and sugar. Stay close to the pot and keep stirring from the bottom of the pot.
  6. Stir
  7. As the sugar starts to melt stir it into the fruit to keep the sugar from scorching on the bottom of the pot.
  8. Heat
  9. Once the sugar has melted turn the heat up to medium.
  10. Stir
  11. Continue stirring periodically.
  12. Add
  13. As the mixture starts to boil throw a tablespoon of butter or margarine in the pot to cut down on foam.
  14. Boil
  15. Bring to a roiling boil.
  16. Cook until the peaches become soft, about 20 minutes.
  17. Add
  18. Once the peaches are soft add the pouch of liquid pectin to the pot, stirring. Bring the mixture to a full rolling boil.
  19. Cook
  20. Start your timer for 1 minute and if the jam foams up and looks like it might over flow carefully stir it down.
  21. Boil
  22. Keep the jam boiling for one full minute. Once your timer goes off remove the pot from the hot burner.
  23. Skim any foam from the top and fill your jars leaving a 1/4 inch head space.
  24. Process
  25. Once you have filled all your jars you will need to process this jam in a hot water bath. Please follow the direction on the box of liquid pectin for the processing time for your part of the country.
