Ingredients:
  • 1 cup rice, rinsed and drained
  • 1 cup canned whole kernel corn, drained
  • 1 dash salt
  • 1 dash freshly ground black pepper
  • 1 (8-ounce) can tomato sauce
  • 1/2 cup water
  • 1/2 cup coarsely chopped onion
  • 1/2 cup coarsely chopped green bell pepper
  • 1 pound extra-lean ground beef
  • 1 (14.5-ounce) can diced tomatoes
  • 4 strips bacon, halved lengthwise
  • 1 cup shredded cheddar cheese or cheddar Jack blend, optional

How to cook:
  1. Gather the ingredients.
  2. Put the rice in a 2-quart baking dish.
  3. Spoon the corn evenly over the rice layer and sprinkle lightly with salt and freshly ground black pepper.
  4. Combine the 1 can of tomato sauce with 1/2 cup of water and pour over the corn layer.
  5. Sprinkle with the chopped onion and bell pepper.
  6. Top the onion and pepper layer with the ground beef and sprinkle lightly with salt and freshly ground black pepper.
  7. Add the can of diced tomatoes.
  8. Top with the strips of bacon.
  9. Cover tightly with foil and bake at 350 F for 1 hour.
  10. Uncover and cook 30 minutes longer, until bacon is crisp.
  11. If desired, top with shredded cheese, return to the oven and continue baking just until the cheese has melted.
