  • 8 ripe plums , halved, stone removed
  • 4 tbsp maple syrup
  • 50g butter , cut into pieces
  • 50g plain flour
  • 50g rolled oats
  • 25g golden caster sugar
  • ½ tsp ground cinnamon
  • 25g flaked almond

How to cook:
  1. Heat oven to 200C/fan 180C/gas 6. Place the plum halves, skin side down, in the base of a large heatproof dish. Drizzle over half the maple syrup and roast for 10 mins.
  2. Meanwhile place the butter, flour, oats, sugar and cinnamon in a bowl and rub the butter into the mixture until you have rough crumbs. Stir in the almonds, then sprinkle over the plums. Drizzle the top with the remaining maple syrup and bake for 15 mins until the top is golden. Serve with custard.

  • 350g ripe plums
  • juice of 1 lemon
  • 100g golden caster sugar
  • 100g self-raising flour
  • 1 tsp cinnamon
  • 50g butter

  • 4 tbsp milk

How to cook:
  1. Preheat the oven to fan 160C/ conventional180C/gas 4. Butter a 1.5 litre ovenproof pie dish.
  2. Peel, core and slice the apples. Halve, stone and quarter the plums. Put the apples in a pan with the lemon juice, sugar and 1 tbsp water. Bring to the boil, then cover and cook gently for 5 minutes. Add the plums and cook for a further 5 minutes.
  3. Turn the fruit into the prepared dish. Tip the flour and cinnamon into a bowl, add the butter, cut into small pieces and rub in with your fingertips. Stir in the sugar, then add the egg and milk and mix lightly to a soft batter (this can be done in the food processor).
  4. Drop tablespoonsful of the batter over the fruit, leaving gaps where the fruit peers through, then scatter over the nuts. Bake for 25-30 minutes until the topping has a crisp brown crust.

  • 125 g (4oz) butter, chilled and cut into cubes
  • 50 g (2oz) rolled oats
  • 75 g (3oz) demerara sugar

  2. Empty fruit into a shallow, ovenproof serving dish. Set aside.
  3. To make the topping, put the flour into a bowl and rub in the butter with your fingers until the mixture resembles fine rubble. Mix in the oats and demerara sugar, then scatter the topping over the fruit.

  • 2.5 cups apples, peeled and thinly sliced
  • 2.5 cups plums, peeled and thinly sliced
  • 1 lemon, juice of
  • 1/3 cup white granulated sugar
  • 3 tbsp all-purpose or plain flour
  • 1 tsp cinnamon
  • 1/2 tsp ginger
  • pinch of salt
  • 1/3 cup all-purpose or plain flour
  • 1/3 cup light brown sugar
  • 1/4 cup white granulated sugar

How to cook:
  1. Preheat the oven to 375 degrees F. In a mixing bowl add all fruit filling ingredients and mix to combine. Set aside and rest for at least 5 minutes to allow the juices to release.
  2. In another mixing bowl combine the 1/3rd cup flour, 1/3rd cup brown sugar, 1/4th cup white granulated sugar, 2/3rd cup rolled oats and a pinch of salt. Mix well. Add in cubed butter and use a pastry cutter or your hands to press or pinch the butter into the flour mixture until it is well incorporated and forms a crumbly texture.
  3. Pour the fruit mixture into a prepared 10 inch casserole dish or cast iron skillet. Then sprinkle the crumble mixture evenly over the top. Bake at 375 degrees F for 35-40 minutes until the fruit is bubbly and the topping is a crisp golden brown. Remove from the oven and allow to rest for 5-10 minutes before serving. Serve with a drizzle of heavy cream, yogurt, whipped cream, ice cream or simply on its own. Enjoy!
