The Best Apple Cake Ever! The perfect sweet and spicy cake, baked with chunks of apples and walnuts and smothered in a sweet, buttery vanilla glaze. So easy to make too!

  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 2 teaspoons cinnamon
  • ½ teaspoon nutmeg
  • ½ teaspoon salt
  • 1 ½ cups vegetable oil
  • 1 ½ cups granulated sugar
  • ½ cup brown sugar
  • 3 eggs
  • 2 teaspoons vanilla
  • 3 large apples, peeled and cut into large pieced (Note: The original recipe calls for tart green apples, but we used some red Cortland apples we had on hand and it was delicious!)
  • 1 cup chopped walnuts (optional)
  • 3 tablespoons butter
  • 3 tablespoons brown sugar
  • 3 tablespoons granulated sugar
  • 3 tablespoons heavy cream
  • ¼ teaspoon vanilla

How to cook:
  1. Preheat oven to 325 degrees. Grease and flour a 12-cup Bundt pan and set aside.
  2. In a large bowl, sift together flour, baking soda, cinnamon, nutmeg and salt. Sift two additional times and set aside.
  3. In the bowl of a stand mixer, combine oil and both sugars, and mix until well blended.
  4. Add eggs one at a time, mixing thoroughly after each addition. Add vanilla and mix again.
  5. Add the sifted dry ingredients to the batter and mix thoroughly. By hand, fold in apples and walnuts and mix until evenly combined.
  6. Spoon the batter into the prepared bundt pan. Bake for 1 hour and 15 minutes or until a toothpick inserted into the center of the cake comes out clean.
  7. Remove cake from the oven and allow to cool in the bundt pan for 20 minutes.
  8. While the cake is cooling, prepare the glaze. In a saucepan, over medium heat, combine all of the glaze ingredients. Bring to a boil and allow the mixture to boil for 1 minute.
  9. Remove the cake from the pan, onto a serving plate. Spoon the glaze over the warm cake.
  10. Cool for a little longer before serving.

How to cook:
  1. Preheat oven to 350 degrees.
  2. Peel, core and dice apples.
  3. Add apples to a large bowl with sugar, vegetable oil, pecans, eggs and vanilla.
  4. Mix with a wooden spoon until well combined.
  5. In a separate large bowl, add flour, cinnamon, baking soda and salt. Whisk together.
  6. Add dry ingredients into wet ingredients and stir until well combined.
  7. Spray a 13" x 9" or 10" springform cake pan with non-stick cooking spray.
  8. Pour in cake batter and bake for fifty minutes to one hour. A toothpick inserted should come out clean when it's done.
  9. Garnish with powdered sugar if desired. Great warm or at room temperature.

  • 2 apples (We used Royal Gala, but any sweet apple is fine)
  • 3 eggs
  • 1/2 cup milk
  • 1 tbsp cinnamon powder
  • 2 cups self-raising flour
  • 2 cups granulated sugar
  • 1 tsp baking powder
  • 1 cup vegetable oil
  • To sprinkle: Icing sugar
How to cook:
  1. Line a baking tin with butter and flour to prevent sticking, and pre-heat the oven to 180C.
  2. Peel the apples and retain the peel. Cut the apple flesh into small 1 cm chunks and cover them in the cinnamon powder.
  3. Put the apple peel in a blender with the milk (we used our Nutribullet to do this) and blend together.
  4. Then place the milk/peel in a mixer bowl and add the eggs, oil, flour, sugar and baking powder and mix everything well together.
  5. Then add the apple chunks and mix well by hand.
  6. Pour the batter into the baking tin and place in the oven at 180C for about 55 minutes.
  7. The cake is cooked when a knife inserted into the middle comes out clean.
  8. Remove from the oven and allow to cool before removing from cake tin.

How to cook:
  1. Combine
  2. In a medium bowl, combine chopped apples and sugar; cover and let sit in refrigerator for one hour
