Ingredients:
- 120 g Plain Flour
- 60 g Caster Sugar
- 60 g Unsalted Butter
- 500 g Cooking Apples ((peeled & chopped weight))
- 300 g Unsalted Butter/Stork
- 300 g Light Brown Sugar ( (50g extra for the apples))
- 300 g Self Raising Flour
- 6 medium Eggs
- 1 tsp Vanilla
- 1 tsp Ground Cinnamon
- 100 g Icing Sugar
- 1-3 tbsp Water
- 1/2 tsp Ground Cinnamon

- For the Crumble
- Rub together the Sugar, Flour and Butter until the mixture resembles bread crumbs, leave to the side for now.
- For the Cake
- Preheat your oven to 180C/160C Fan and line a 9x13" Traybake Tin.
- Peel and core the Apples, cube the apples into about 2cm pieces.
- Put the apples into a bowl, and cover with 50g of Light Brown Sugar. Mix it up so all the apple pieces are covered and leave to the side.
- Beat together the Butter/Stork and Sugar until light and fluffy.
- Add in the flour, eggs, vanilla and cinnamon and beat till smooth. Fold through the apple mixture and pour the mixture into the tin!
- Sprinkle the crumble mixture onto the cake!
- Bake in the oven for 50-60 minutes or until baked through (Can take a little less, or a little more than an hour - depends on your oven, see tips below)
- Leave the cake to cool in the tins for 10-15 minutes and then transfer to a rack to cool completely.
- For the Decoration
- Once the cake has cooled - stir together the Icing Sugar and Cinnamon, and then as much water as you like - I like it thick and drizzly!

- 200 g plain flour
- ½ tsp baking powder
- 100 g butter (room temperature, cubed)
- 90 g brown sugar
- ½ tsp cinnamon
- 1 small egg
- 2 tbsp jam (plum, raspberry, rhubarb or cherry)
- 3-4 apples (cored and thinly sliced)
- ¼ lemon (juice only)
- 1-2 tbsp brown sugar

- Preheat the oven to 180°C Fan. Line a baking tray with baking parchment with sides overhanging slightly so it's easier to lift the traybake out later.
- In a large mixing bowl, mix flour and baking powder. Cube room temperature butter and rub it into the flour with your fingertips.
- Add sugar, cinnamon and a pinch of salt and mix. Then crack an egg in and mix with your hands until large clumps of dough form, squeezing the dough to help the process along.
- Tip half of the mixture into a baking tray and press down to cover the whole surface. Spread the jam of your choice on top in a thin layer
- Core your apples, and peel them if their skins are tough. Slice the apples very thinly and start layering them on top of your jam, sprinkling with some brown sugar in between layers. You should get 2-3 layers.
- Sprinkle the rest of the buttery mixture to create a crumble top.
- Bake in the centre of the oven for 40 minutes until the top is golden brown. Cool then lift out and cut into portions to serve with tea or coffee! Or serve warm with a scoop of vanilla ice cream!

- Conventional Method
- Preheat oven to 160 degrees celsius (fan-forced).
- Grease and line a 23cm round cake tin with baking paper.
- Place the butter and brown sugar into a bowl and cream together with electric beaters on high speed until pale and fluffy.
- Add the eggs, golden syrup, vanilla essence and milk and continue to beat on low speed until smooth and creamy.
- Sift in the self-raising flour and mix on low speed until just combined (do not over-beat).
- Spread half of the cake batter into the prepared tin.
- Add half of the apple slices in a thin layer.
- Spread over the remaining cake batter and top with the remaining apple slices. Set aside.
- In a bowl, use your fingers to rub the plain flour, rolled oats, butter and sugar together until they resemble crumbs (not too fine).
- Sprinkle the crumbs over the cake and press down lightly.
- Bake in the oven for 60 minutes or until a skewer inserted into the middle comes out clean (it may take a bit longer than 60 minutes depending on your oven).
- Allow to cool in the tin for 30 minutes before transferring to a wire rack to cool completely.
- Thermomix Method
- Preheat oven to 160 degrees celsius (fan-forced).

- Place the butter, brown sugar, eggs, golden syrup and vanilla extract into the Thermomix bowl and mix for 80 seconds, Speed 4.
- Add the milk and mix for a further 20 seconds, Speed 4.
- Add the self-raising flour and mix for 60 seconds, Interval Speed, Kneading function.
- Spread half of the cake batter into the prepared tin. Add half of the apple slices in a thin layer.
- Spread over the remaining cake batter and top with the remaining apple slices. Set aside.
- Place the plain flour, softened butter and brown sugar into the Thermomix bowl. Mix for 10 seconds, Speed 7.
- Add the rolled oats and mix for 5 seconds, Reverse, Speed 7. Sprinkle the crumbs over the cake and press down lightly.
- Bake in the oven for 60 minutes or until a skewer inserted into the middle comes out clean (it may take a bit longer than 60 minutes depending on your oven).
- Allow to cool in the tin for 30 minutes before transferring to a wire rack to cool completely. Serve warm or cold.

- Grease and flour an 8" round springform pan. Set aside.
- Preheat oven to 375 degrees F.
- to make the topping:
- In a medium bowl, whisk together both sugars, cinnamon, salt and flour. Add melted butter and fluff with fork until mixtures creates crumbs. Set aside.

- In a medium bowl, toss together apple slices with two tablespoons of sugar, 1/2 teaspoon of cinnamon and the apple cider vinegar. Set aside.
- Arrange apple slices over the batter.
- Sprinkle crumb topping over the apples covering completely.
- Bake the cake for 30 to 35 minutes or until the topping is golden brown.
- Let cool completely in the pan.
- Transfer onto a serving plate or stand. Slice and serve.
- Keep in a covered container for up to 4 days.
