Ingredients:
- 2 Cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon kosher salt
- 1/2 cup unsalted butter
- 1/2 cup granulated sugar
- 1/2 cup light brown sugar
- 2 eggs
- 2 teaspoon vanilla extract
- 2 Granny Smith apples (1 grated and 1 diced, 1 cup of each)
- 3/4 cup all-purpose flour
- 1/4 cup granulated sugar
- 1/4 cup light brown sugar
- 1/2 teaspoon ground cinnamon
- 6 tablespoons unsalted butter (melted)
- 1 cup powdered sugar
- 4 tablespoons milk (or heavy cream, divided)

- Preheat oven to 375°F (190°C). Grease a 12 cup muffin pan, or line it with muffin wrappers.
- In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg and salt. Set aside.
- In a large bowl, beat together butter, sugar and eggs until smooth. Mix in vanilla. Pour half of the dry mixture into the wet mixture and mix until combined. Pour the remaining dry mixture in and continue mixing until combined. Fold in the apples with a spatula or spoon.
- Spoon the mixture into the prepared muffin pan or use a cookie scoop, filling the muffin wells about 3/4 of the way full. Set aside.
- Crumble
- In a medium sized bowl, whisk together the crumble ingredients: flour, both sugars, and cinnamon. Using a fork, mix in the melted butter until large crumbs start to form. Don’t over mix. Spoon the crumble on top of the batter and lightly press down to help them stick.
- Bake 20-22 minutes in the preheated oven, or until a toothpick inserted in the center of a muffin comes out clean. Allow muffins to sit in pan for 5 minutes, then transfer to a wire rack to cool completely.
- Icing
- Whisk the powdered sugar and 2 tablespoons milk (or cream) together until combined and smooth, if the icing needs to be thinner, then add the remaining 1-2 tablespoons milk. and mix until the desired consistency is reached. Drizzle icing over muffins and serve warm.
- Store covered at room temperature.

- 1 cup all-purpose flour ((125g))
- ¾ cup brown sugar (light or dark is fine, I usually use light) (tightly packed (150g))
- 2 Tablespoons granulated sugar
- 1 ½ teaspoon ground cinnamon
- 6 Tablespoons salted butter (melted)
- ½ cup canola oil (vegetable oil would also work (120ml))
- ½ cup firmly packed light brown sugar ((100g))
- ¼ cup granulated sugar ((50g))
- ½ cup buttermilk (or ½ Tbsp vinegar or lemon juice stirred into ½ cup milk and allowed to sit for 5 minutes) ((120ml))
- 2 large eggs (lightly beaten)

- Crumble
- Prepare the crumble first by whisking together flour, sugars and cinnamon.
- Pour the melted butter into the mixture and, using a fork, stir until crumbles form. Set aside.
- Muffins
- In medium-large bowl, whisk together oil, brown sugar, granulated sugar, and buttermilk. Whisk well until all ingredients are well combined (about 1 minute).
- Add eggs, whisking until combined.
- Stir in vanilla extract.
- In separate, medium-sized bowl, stir together flour, baking powder, cinnamon and salt.
- Gradually stir flour mixture into wet mixture until just combined (do not over-mix!).
- Gently fold in apple pieces.
- Divide batter into prepared muffin tins (filling each about ¾ of the way full).
- Top with crumble topping, splitting evenly among muffins.
- Bake on 375F (190C) for 25 minutes (toothpick inserted in center should come out mostly clean with no wet batter on it).

- Preheat the oven to 400° F (204° C). Line a standard muffin pan with paper liners and set it aside.
- Make the crumble topping: In a small bowl, stir together flour, granulated sugar, brown sugar, and cinnamon. Then add the small pieces of cold butter. Mix with your hands until crumbly (and the crumble are pea-size), cover, and chill in the fridge until ready to use.
- Make the muffins: In a large bowl, stir together flour, baking powder, salt, cinnamon, and nutmeg. Set aside.
- In the bowl of a stand mixer, mix together eggs and granulated sugar until combined. Then mix in Greek yogurt, oil, and vanilla extract until the batter becomes pale yellow.
- Mix in the flour mixture into the batter until homogeneous and thick.
- Spoon batter into prepared muffin tin, filling 1/2 of each cup. Tap the pan onto a countertop to set the batter. Add a heaping Tablespoon of the chopped apple pie filling in each cup, and gently press the apples into the batter using the back of a spoon. Top the filling of each cup with a Tablespoon of the batter and then with the crumble topping.
- Place the muffin tin on the middle rack of the oven and reduce the oven temperature to 375° F (or 190° C). Bake for 19-22 minutes, or until a toothpick inserted in the center comes out clean.
- Place the pan on a wire rack and let the muffins cool for 5 minutes while you make the glaze.
- For the glaze, whisk together powdered sugar, milk, and vanilla extract until homogeneous and smooth. If needed, add more powdered sugar (if too thin) or more milk (if too thick). Drizzle over warm muffins and let it set.
