Ingredients:
  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened at room temperature
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 egg
  • 1 cup plain full-fat yogurt
  • 2 cups peeled, cored, and finely chopped baking apples (approximately 2 apples)
  • 3 tablespoons brown sugar
  • 3 tablespoons old-fashioned rolled oats
  • 3 tablespoons all-purpose flour
  • 3 tablespoons unsalted butter
  • 1/2 teaspoon cinnamon
How to cook:
  1. Preheat the oven to 375 °F.
  2. In a large bowl, whisk together flour, oats, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In a medium bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy, about 1-2 minutes. Add the egg and beat until fully incorporated. Add the yogurt and beat until fully mixed.
  4. Add the wet ingredients to the dry ingredients and stir with a spatula until most of the flour is mixed in, or until just combined (the batter will be very thick).
  5. Add in the apples and stir until just combined. Do not overmix.
  6. Line a 12-cup muffin pan with muffin liners or spray the inside with nonstick baking spray. Divide batter evenly among the muffin liners. Fill each cup about 85% full (I filled mine up 100% because I have very high liners).
  7. In a small bowl, mix together the oat streusel topping ingredients until combined and crumbly. Sprinkle a spoonful on top of each muffin.
  8. Bake the muffins for 20 to 25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Ingredients:
  • ¼ cup brown sugar
  • 1/4 cup all purpose flour
  • 1/4 cup old fashioned oats
  • ¼ teaspoon ground cinnamon
  • 1/8 teaspoon salt
  • 2 Tablespoons cold unsalted butter (cut into pieces)
  • 2 cups all purpose flour
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon allspice
  • ¼ teaspoon nutmeg
  • ⅛ teaspoon ground cloves
  • ½ teaspoon salt
  • 1 and 1/2 teaspoons baking powder
  • ½ teaspoon baking soda
  • 2 large eggs
  • ½ cup oil (vegetable or canola)
  • ½ cup unsweetened applesauce
  • 1 teaspoon vanilla extract
  • ¾ cup brown sugar
  • ¼ cup granulated sugar

How to cook:
  1. Preheat oven to 400ºF.
  2. Spray the wells of a cupcake pan with non-stick spray or line with cupcake liners. Set aside.
  3. OAT STREUSEL
  4. In a small bowl, combine brown sugar, flour, oats, and ground cinnamon. Toss together with a fork.
  5. Add your softened, cubed butter and work into sugar mixture with a fork or your fingers until pea-sized clumps form. Set aside.
  6. MUFFINS
  7. In a large bowl, whisk together flour, ground cinnamon, allspice, nutmeg, ground cloves, salt, baking powder, and baking soda. Set aside.
  8. In a medium bowl, whisk together eggs, oil, apple butter, and vanilla until smooth. Whisk in both sugars until no clumps remain.
  9. Pour wet ingredients into dry ingredients and stir gently until just combined and no white flour streaks remain. Gently fold in chopped apples.
  10. Spoon the batter into the prepared wells. Sprinkle oat streusel mixture evenly onto each of the mounds of batter, about 3/4 Tablespoon for each. Bake the muffins for 5 minutes, then, without opening the oven door, decrease the temperature to 350ºF and bake for an additional 15-16 minutes, or until a toothpick inserted in center comes out mostly clean. Allow to cool completely on a wire rack before slicing and serving. Leftovers can be kept covered at room temperature for 4 days or in the refrigerator up to 6 days. Muffins freeze well, up to 2 months. Thaw in refrigerator overnight or thaw in the microwave about 10 seconds.

  • 2 Tb granulated sugar
  • 2 Tb light brown sugar
  • 1/2 C all purpose flour
  • 1/2 tsp cinnamon
  • 1/3 C old fashioned oatmeal

  • 3 Tb unsalted butter (softened)
  • 1/4 C granulated sugar
  • 2 Tb light brown sugar

How to cook:
  1. Preheat oven to 350°F. Line a muffin pan with 8 paper liners.
  2. In a medium bowl, combine dry crumb topping ingredients. Pour melted butter over dry ingredients, stir together to create pea size crumbs.
  3. In a large bowl or stand mixer, cream together butter and sugars until smooth and fluffy. Mix in vanilla and egg, scraping the bowl as needed. Mix in salt, spices and baking powder, followed by half of the flour. With mixer running on low, slowly add the yogurt, followed by remaining flour. Beat until no streaks remain. Stir in apple chunks by hand.
  4. Divide batter between 8 paper liners, using a large cookie scoop.
  5. Top off batter with prepared crumb topping, coating the batter well.
  6. Bake for 18-20 minutes or until a toothpick inserted comes out clean. Cool in pan for 1-2 minutes, then transfer to a wire rack to cool completely.
  7. Whisk together powdered sugar and water. Use a spoon or small whisk to drizzle glaze over cooled muffins.
  8. Store in an airtight container for up to several days.

How to cook:
  1. Streusel Topping
  2. Begin by making the streusel topping. In a bowl, combine the melted butter, flour, brown sugar, oats, cinnamon and salt with a fork until all dry pieces are incorporated and pea sized crumbles form. Set aside.
  3. Apple Muffins
  4. Whisk together the flour, salt, baking powder and spices into a bowl and set aside.
  5. In a large bowl, mix together the wet ingredients (sugar, egg, oil, butter, greek yogurt, whole milk and vanilla) with a whisk until combined.
  6. Add the wet ingredients into the dry ingredients and mix with a rubber spatula or wooden spoon until just combined. Fold in the diced apple until incorporated, but do not overmix.
  7. Preheat the oven to 425℉ and line a standard muffin tin with 12 liners. You can also omit the liners and simply grease your tin.
  8. Fill each muffin well evenly with batter, then evenly distribute the streusel topping over each muffin.
  9. Bake for 5 minutes, then lower the oven temperature to 350℉ and bake for another 13-16 minutes until a toothpick inserted into the center of the muffin comes out clean.
  10. Cool for 5 minutes in the pan, then remove the muffins to a wire rack to finish cooling.
