Apple puff pastry rolls with a warming apple cinnamon filling, you can have these treats ready to serve within an hour.

  • 1 large or 2 small apples
  • a pinch of zest from 1 organic lemon
  • 2 tablespoons fresh lemon juice
  • 6 tablespoons granulated sugar
  • 1 teaspoon cinnamon
  • 2 tablespoons unsalted butter
  • 2 rectangles puff pastry (total of 275 g/ 9.7 oz)

How to cook:
  1. Preheat the oven to 200 degrees Celsius/ 400 degrees Fahrenheit. Line two baking trays with baking paper.
  2. Chop apples
  3. Peel and chop the apples into very small cubes. Immediately mix the cubes with 2 tablespoons lemon juice and just a little bit of the grated lemon zest.
  4. Mix the sugar and the cinnamon in a small bowl.
  5. Melt the butter in a small pot.
  6. Pastry
  7. Unroll one rectangle of pastry on your working surface. Brush with half of the butter and sprinkle with half of the sugar-cinnamon mixture.
  8. Fill
  9. Spread the apple cubes all over the pastry. Cover with the second puff pastry rectangle. Brush this pastry sheet with the remaining butter and sprinkle with the remaining sugar-cinnamon mixture.
  10. Roll up the pastry starting from the long side and make sure that the seam faces down. Using a sharp knife, cut the roll into 3 cm/ 1.18 inch wide pieces.
  11. Bake: Place them on the prepared baking sheets leaving some space between them, and bake for about 20-25 minutes or until golden brown and crispy.
  12. Let cool on the baking sheets and serve as fresh as possible.

  • 300 g/10.6 oz apples (Note 1)
  • 1 teaspoon lemon juice
  • 3 tablespoons brown sugar
  • ½ tablespoon cornstarch
  • ½ teaspoon cinnamon
  • two gratings of nutmeg
  • 1 ready-rolled sheet puff pastry (Note 2)
  • 40 g/ 1.4 oz/ ¼ cup chopped walnuts
  • 1 egg + 1 tablespoon milk (only if baking the squares)
  • icing sugar (optional)

How to cook:
  1. Apple filling:
  2. Peel the apple, core, and chop into very small cubes. Place in a bowl and mix well with the lemon juice. Add sugar, cornstarch, cinnamon, and nutmeg and mix well to coat.
  3. Muffin tin pies – makes 12:
  4. Preheat the oven to 200 degrees Celsius/ 400 degrees Fahrenheit. Butter the molds of the muffin tin very well to prevent the tart shells from sticking.
  5. Unroll the puff pastry on the working surface, leave it on the paper it is rolled on.
  6. Cut circles to fit the muffin pan molds, about 7.5 cm/ 3 inches. You can use a cutter or a drinking glass of the appropriate size.
  7. Press the circles into the molds of the muffin pan. To get 12, you will have to roll the pastry scraps left over after you cut most of the circles again and cut a couple more circles.
  8. Fill the shells with apple filling and sprinkle with chopped walnuts. Bake for about 20 minutes or until the edges of the pies are golden brown. Leave in the tin for about 5-10 minutes. Transfer to a wire rack to cool.
  9. Sprinkle with icing sugar before serving, if desired.
  10. Apple pie squares – makes 8:
  11. Preheat the oven to 200 degrees Celsius/ 400 degrees Fahrenheit. Line a baking tray with baking paper.
  12. Unroll the pastry on the working surface, leave it on the paper it was rolled on.
  13. Halve the pastry vertically to get two long wide stripes. Cut the stripes horizontally to obtain 8 pieces. If the sheets are as large as those I used, they will be about 10x12 cm/ 4-4.7 inches.
  14. Place the filling on one side, making sure you leave enough space on the side to fold the dough.
  15. Sprinkle some chopped walnuts on top of the filling.
  16. Fold and use a fork to seal the edges.
  17. Beat the egg and the milk together and use the mixture to brush the pastry.
  18. Bake for 20 – 25 minutes or until golden brown. Leave on the tray for about 5-10 minutes. Transfer to a wire rack to cool.
  19. Sprinkle with icing sugar before serving, if desired.

  • 2 large apples ( (400 g/ 14 oz ))
  • 1 tablespoon sugar
  • 1,5 tablespoons apricot jam or any

  2. Next roll out the puff pastry sheet on a lightly floured cutting board. Using the back of the spoon spread jam uniformly thorough over the surface of the puff pastry. Next spread the apple mixture evenly on top and sprinkle with raisins.
  3. Carefully roll up the pastry roll lengthwise so that in the end you have one long roll. Using a sharp knife cut the roll into 10 to 12 equal slices. Arrange the pinwheels on a baking sheet lined with a parchment paper. Don't forget to leave enough space between the pinwheels for them to expand. Gently press each roll on top, so that it will become a bit flat.
  4. Brush each apple roll top lightly with the "sauce" leftover from the apples. Bake for 20 minutes or until nicely golden brown. Dust with powdered sugar and enjoy!
