This is the ultimate apple pie! No too sweet... but packed with delicious apple-y goodness! This easy no bake pie is guaranteed to be a huge hit!

Ingredients:
  • 2 cups heavy cream (divided)
  • ⅓ cup sugar
  • ½ teaspoon cinnamon
  • 1 cup apple juice (divided)
  • 1 packet gelatin ((I used Knox Brand))
  • 1 can apple pie filling ((20 oz))
  • 1 prepared graham pie crust or baked pie crust
  • 2 tablespoons sugar
  • ½ teaspoon vanilla

How to cook:
  1. Place ⅓ cup cold apple juice in a bowl. Sprinkle with gelatin powder and let sit 3 minutes.
  2. Bring remaining ⅔ cup apple juice to a boil. Add to gelatin mixture and stir until dissolved. Place in the freezer for 15-20 minutes or just until cooled and slightly thickened.
  3. Meanwhile, with mixer on medium-high, beat 1 ½ cups heavy cream until stiff peaks form. Add sugar and cinnamon and beat just until combined.
  4. Pour cooled & slightly thickened apple juice mixture into the cream and whisk until combined.
  5. Chop the can of apple pie filling. Set aside ½ cup & fold the remaining chopped filling into the cream mixture. Place the cream mixture in the fridge for about 15 minutes or until slightly thickened.
  6. Pour/spoon into pie crust and let set 2 hours or overnight.
  7. Whip remaining cream on medium high until stiff peaks form. Add sugar & vanilla. Garnish pie with whipped cream and remaining apple pie filling.
  8. Serve chilled.

  • 1 Springform pan (26 cm diameter or about 10 inches)
  • 250 grams Pastry flour
  • 1 tsp Baking powder
  • 100 grams sugar
  • 1 packet Vanilla sugar
  • 125 grams cold butter
  • 1 egg
  • 1 tsp grated Lemon peel
  • 1 kilogram Apple
  • juice of lemons
  • 3 Tbsps sugar
  • 2 packets vanilla pudding mix
  • 100 grams sugar
  • 750 milliliters tart Cider
  • 1 packet Vanilla sugar (or 80g cornflour)
  • 400 grams Whipped cream
  • 2 packets whipped cream stabilizer
  • 1 organic lemon
  • 3 Tbsps sugar
How to cook:
  1. For the dough, form flour into a mound on a flat work surface. Mix with baking powder, vanilla sugar, lemon zest and salt. Make a well in the center. Cut cold butter into small pieces and distribute around well. Crack egg in well.
  2. Chop ingredients together with a knife and then knead with hands into a smooth dough. Shape into a ball, wrap in plastic wrap and chill for 30 minutes.
  3. Roll out dough and press 2/3 of dough into bottom of a springform pan.
  4. Clamp on springform pan ring. Roll out remaining pastry into a roll and lay on edges of pan, touching bottom dough piece. Press around pan to form a 4 cm (approximately 1 1/2 inch) high edge. Press firmly to seal 2 pieces together.
  5. For the filling, mix vanilla pudding powder according to package directions but use cider instead of milk. Add sugar and vanilla sugar.
  6. Peel apples, cut into quarters and remove cores. Cut flesh into small pieces and mix with lemon juice and 3 tablespoons sugar. Spread evenly over dough.
  7. While still hot, pour pudding mixture over apples and bake in a preheated oven at 170°C (approximately 350°F) for 60 minutes. Remove and cool in pan.
  8. To serve, loosen springform pan rim. Whip cream with stabilizer, spread over pie and smooth.
  9. Rinse lemon under hot water, dry and remove fine strips with a zester. Roll in sugar and use to decorate pie.

  • 1 (9-inch) refrigerated rolled pie crust (recommended: Pillsbury)
  • 2 medium Granny Smith apples, peeled
  • 1/4 cup granulated sugar
  • 1 tablespoon ground cinnamon, plus extra for dusting
How to cook:
  1. Special equipment: a 3-inch round cookie cutter
  2. Place an oven rack in the center of the oven. Preheat the oven to 400 degrees F. Line a baking sheet with a silpat or parchment paper sprayed with vegetable cooking spray.
  3. Unroll the pie crust out on a work surface. Using a 3-inch round cookie cutter, cut out 8 disks of pastry. Arrange the pastry disks on the prepared baking sheet. Using the tines of a fork, prick the pastry all over. Bake until brown and crispy, 8 to 10 minutes. Remove to a wire rack to cool completely, about 10 minutes.
  4. Slice the bottom of the apples to create an even surface for cutting. Slice each apple into 6 (1/2-inch) slices. Cut each apple slice in half and remove any seeds or pieces of core. In a medium bowl, mix together the sugar and 1 tablespoon cinnamon. Add the apple slices and toss until coated. Shake off any excess mixture. Arrange the apple slices on the same baking sheet in a single layer. Bake until dark brown, about 12 to 15 minutes. Remove from the oven and let cool for 15 minutes.
  5. In a medium bowl, using an electric hand mixer, beat the cream until thick, about 1 minute. Add the powdered sugar and continue to beat until the cream is very thick.
  6. To assemble the pies: Place the pastry disks on a work surface. Divide the cooked apple slices among 4 of the disks. Dollop about 2 tablespoons of the cream on top of the apples and cover with the remaining disks.
  7. Transfer the apple pies to dessert plates, dust with cinnamon and serve immediately.

  3. Top with second pie crust; seal edge and flute. Cut slits or shapes in several places in top crust. Brush top with egg white; sprinkle with coarse sugar.
  4. Bake 40 to 50 minutes or until apples are tender and crust is golden brown, covering crust edge with strips of foil after 15 minutes of baking to prevent excessive browning. Cool 1 hour.
