  • 2 1/4 cups all purpose flour ((290 grams))
  • 3/4 cup sugar ((150 grams))
  • 1/2 teaspoon cinnamon
  • 3/4 cup butter (frozen and grated) ((150 grams))
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 large egg beaten
  • 3/4 cup greek yogurt ((190 grams))
  • 1/3 cup water ((80 grams))
  • APPLE PIE FILLING
  • 2 1/4 cups chopped apples ((approximately 3 apples peeled and chopped))
  • 3/4 - 1 teaspoon cinnamon (4-6 grams)
  • 1/3 cup packed brown sugar ((75 grams))
  • 1 1/2 teaspoons corn starch
  • 1/2 cup water ((115 grams))

How to cook:
  1. Pre-heat oven to 350° (180° celsius), lightly grease and flour a 9 inch (22-23 cm) cake pan. Best to make pie filling first and while it is cooling prepare cake batter.
  2. APPLE PIE FILLING
  3. In a medium pot add the chopped apples, cinnamon, brown sugar, corn starch and water, stir to combine, cook on low/medium until thickened, approximately 10-15 minutes, stirring often. Once thickened, remove from heat and let cool.
  4. CAKE BATTER
  5. In a large bowl whisk together the flour and sugar, add the frozen grated butter and with a fork mix until you have a crumbly mixture, remove 1/2 a cup and set aside.
  6. To the remaining mixture add the baking soda, baking powder and cinnamon. Then add the egg, yogurt and water, stir just until moistened (stir approximately 13 or 14 times).
  7. Spread 2/3 of the batter on the bottom of the prepared cake pan, spoon the apple pie filling over the batter. Drop spoonfuls of the remaining batter on top of the filling, sprinkle with reserved crumb mixture. Bake for approximately 50-55 minutes. Let cool. Enjoy!

How to cook:
  1. Preheat oven to 350°F. Spray a 9-inch round cake pan with non-stick baking spray (or butter and flour) and set aside.
  2. In a medium sauce pan, add peeled and chopped apples, apple pie spice, cinnamon, light brown sugar, corn starch, vanilla extract and water. Bring to a simmer and allow to cook for roughly 10 minutes, stirring frequently. Cook until the apples soften and the liquid thickens and becomes syrupy. Set apple mixture aside and allow to cool while you prepare cake.
  3. In a large mixing bowl, whisk together dry ingredients: flour, sugar, apple pie spice, cinnamon, baking powder and baking soda. Add grated butter. Use a fork to press mixture together until it becomes crumbly. Scoop out 1/2 cup of mixture and set it aside.
  4. Then, add beaten egg, yogurt, vanilla extract and water. Using a firm spatula or wooden spoon, fold and press ingredients together until just combined - careful not to over mix.
  5. Add a little more than half of the batter to the bottom of the cake pan. Using a spoon, spread the mixture out to the sides of the pan. Top with the apple mixture, again spreading to the sides of the pan. (NOTE: Greasing the back of a spoon will help spread the batter around easier.)
  6. Dollop scoops of the remaining batter over the apple mixture. Then, evenly sprinkle the reserved crumb topping over the pan. Place the cake pan onto a cookie sheet, in case any of the filling bubbles over during baking.
  7. Bake for 55 to 60 minutes. Once baked, remove from oven and allow to cool before serving.
  8. Drizzle some caramel sauce on top before serving. Can also be served warm with a scoop of vanilla ice cream. Or enjoyed for breakfast with a cup of coffee!

How to cook:

How to cook:

  2. To make streusel: In a medium bowl, mix brown sugar, 3/4 cup flour, and cinnamon. Cut in the butter with a fork until crumbly. Stir in walnuts.
  3. In a medium bowl, stir together 3 1/4 cups flour, baking powder, and baking soda. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, mixing well after each. Then stir in the vanilla and yogurt. Gently stir in the flour mixture just until blended.
  4. Pour 3 cups of the batter into the Bundt pan, sprinkle with 1/4 of the streusel, and layer with apples. Sprinkle with 1/2 the remaining streusel. Pour in the remaining batter, and top with the remaining 1/4 streusel. Lightly pat the top layer of streusel so it sticks to the cake batter.
  5. Bake 50 to 60 minutes in the preheated oven, or until a toothpick inserted in the center comes out clean. Cool in the pan on a wire rack 15 minutes. Place cookie sheet over pan and carefully invert both. Remove Bundt pan, and let the cake cool completely.
