Gluten Free Apple Muffins with Cinnamon Streusel

Ingredients:
  • 1/2 cup unsalted butter (1 stick)
  • 1/2 cup granulated white sugar
  • 2 large eggs
  • 1/2 cup sour cream (or plain Greek yogurt)
  • 2 cups gluten free flour blend (or regular AP flour if not gluten free)
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1/4 tsp. kosher salt
  • 1/2 tsp. cinnamon
  • 1 large tart apple (such as Granny Smith or Jonagold)
  • 1 large sweet apple (such as Gala, Fuji, or Honeycrisp)
  • 2 Tbsp. unsalted butter (softened)
  • 1/4 packed cup brown sugar
  • 1/4 cup gluten free flour blend (or regular AP flour if not gluten free)
  • 1 tsp. cinnamon
  • 1/4 tsp. kosher salt

How to cook:
  1. For The Muffins:
  2. Heat oven to 400 degrees Fahrenheit.
  3. Peel 1 large (or 2 small) sweet apples such as Gala, Braeburn, or Fuji. Peel 1 large (or 2 small) tart apples such as Granny Smith or Jonagold.
  4. Dice both the sweet and tart apples into very small pieces. (Yields approximately 3 cups of chopped apples). Set aside.
  5. Place ½ cup (1 stick) of softened (but not melted) unsalted butter in a large mixing bowl or the bowl of a Kitchen Aid mixer along with ½ cup granulated white sugar. Cream the butter and sugar using a hand mixer or the whisk attachment of a Kitchen Aid Stand Mixer for a minute or so on medium until it is light and creamy.
  6. Add 2 eggs and ½ cup sour cream (or plain Greek yogurt) to the bowl and mix for another 30 seconds or so until completely combined.
  7. In a separate mixing bowl combine 2 cups gluten free flour blend (or regular AP flour if not gluten free), 1 teaspoon baking powder, 1 teaspoon baking soda, and ¼ teaspoon kosher salt. Stir until completely combined.
  8. Add the flour mixture to the wet ingredients a bit at a time, stirring to combine with a spatula. Repeat until all the batter is combined.
  9. Add the diced apples to the batter along with ½ teaspoon cinnamon and fold in until completely combined. The muffin batter will be a bit dense.
  10. For The Streusel:
  11. Place 2 tablespoon of softened butter to a small bowl.
  12. Add ¼ packed cup brown sugar, ¼ cup gluten free flour blend, 1 teaspoon cinnamon, and ¼ teaspoon kosher salt to the butter. Combine all of these ingredients with a fork until the mixture resembles coarse crumbs.
  13. Bake The Muffins:
  14. Line a muffin tin with muffin or cupcake liners.
  15. Add a spoonful of the muffin batter to the bottom of each muffin cavity, using half of the streusel. Sprinkle a spoonful of the cinnamon streusel on top of the muffin batter.
  16. Add another layer of muffin batter on top of the streusel layer and smooth it out with a spatula. Sprinkle the other half of the streusel over the top of the muffins.
  17. Bake the muffins for 22-24 minutes, rotating the muffin tin once during baking to ensure that all the muffins cook evenly.
  18. Once a toothpick inserted in the center comes out clean the muffins are finished. Remove from the oven and set aside to cool.

Ingredients:
  • 2 large eggs
  • 1/4 cup vegetable oil
  • 1 cup sour cream
  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 cup sugar
  • 1 1/4 tsp cinnamon
  • 1/2 tsp baking soda
  • 1/4 cup granulated sugar
  • 1/4 tsp cinnamon
  • 3 tbsp all-purpose flour
  • 2 tbsp cold, unsalted butter
  • 1 cup chopped apple (or pear)
How to cook:
  1. First preheat your oven to 400° F (205° C). Lightly grease a muffin tin and set aside.
  2. In a small bowl, whisk the eggs until blended. Whisk in the sour cream and oil until smooth. Set aside. Sift all of the ingredients into a large bowl. Gather the ingredients and set aside. In a small bowl, mix together the sugar, flour and cinnamon. Cut in the cold butter with a pastry knife or fork. Once the mixture forms coarse crumbs, set aside. Wash and peel the apples. Cut into roughly 1/2" -inch cubes and set aside.
  3. If using pears, it is best to use ones that are still a bit firm and are not fully ripened.
  4. To make the batter, pour the wet ingredients into the dry ingredients. Gently stir until nearly combined. It is ok if you see a bit of dry ingredients as the batter will be mixed a bit more when you incorporate the fruit. Do not over mix the batter or the muffins will be tough.
  5. Fold in the apples until just incorporated. Divide the batter evenly in the muffin tin and then sprinkle with the streusel topping. Place directly into the oven and bake for about 20 minutes. To check if the muffins are done, insert a wooden skewer into the center. If it comes out clean, remove from the oven. Allow the muffins to cool in the muffin tin for about 10 minutes. Remove and serve.

How to cook:
  1. Preheat the oven to 400 degrees.
  2. Spray muffin tin with cooking spray or line 12 muffin cups with muffing papers.
  3. In a small mixing bowl, beat together eggs and sugar.

  • 1 1/2 teaspoons baking powder

How to cook:
  1. Preheat oven and prep pan
  2. If you’re planning to bake the muffins the day you make the batter, heat oven to 425F. Line a standard muffin tin with 12 liners.
  3. Mix the dry ingredients
  4. In a medium sized mixing bowl, whisk together the flour, baking powder, baking soda, salt and ground spices.
  5. Mix wet ingredients:
  6. Using a standing mixer or large bowl and beaters, cream together butter and sugars on medium to medium-high speed for 3-5 minutes or until light and fluffy. Incorporate eggs, one at time. Beat in sour cream and vanilla.
  7. Combine wet and dry
  8. Pour dry ingredients into wet ingredients in 2-3 additions, alternating with the milk. Mix over low speed until just combined. Do not over-mix.
  9. Refrigerate batter (optional):
  10. For extra fluffy domed muffins, cover and refrigerate batter overnight or for at least two hours. Preheat oven to 425F and line muffin tin with paper liners when you’re ready to bake.
  11. Add apples:
  12. Peel and core apples. Chop into 1/2 inch pieces. Squeeze over lemon, as needed, to prevent browning. Stir into batter.
  13. Make topping
  14. In a medium bowl, combine flour, brown sugar, spices and salt. Stir in melted butter and create crumbs.
  15. Bake
  16. Divide batter evenly among muffin cups. Sprinkle crumb topping over muffins. Bake on center rack of oven for about 5-8 minutes or until muffins rise about 1/4 inch above the tops of the pans. Reduce temperature to 350F (do not open door!). Bake an additional 10-15 minutes or until a toothpick inserted into the center comes out clean. Cool in pan for 5-10 minutes. Turn out onto wire rack and cool completely. Top with powdered sugar, if desired. Enjoy.
