  • 4 tablespoons vegan butter
  • 1/2 cup brown sugar
  • 3 tablespoons maple syrup
  • 1/4 teaspoon salt ((you can add up to 1/2 tsp for extra salty caramel))
  • 1 cup sliced apples
  • 1 1/2 cup flour
  • 3/4 cup sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 cup soy milk ((or almond milk, oat milk, or any other plant-based milk))
  • 1 1/2 teaspoon apple cider vinegar (or white vinegar or lemon juice)
  • 1/3 cup oil (any neutral-flavored oil will work)
  • 1/2 cup apples (diced)

How to cook:
  1. Make the caramel apple topping: (This goes on the bottom of the cake pan, but will become the top when inverted.)
  2. Peel and core 2-3 apples. Cut 1-2 apples into thin slices (about 2-3 cm thick) and dice the other apple into small cubes. (You will need enough slices to cover the bottom of a cake pan and 1/2 cup of diced apples for the cake batter.)
  3. Melt 4 tbsp of vegan butter, 1/2 cup brown sugar, 3 tbsp maple syrup, and salt in a small saucepan and simmer until it begins to boil and the sugar is dissolved.
  4. Pour the sugar mixture into the bottom of a 9 X 2-inch round cake pan and then arrange the sliced apples in a pattern in the sugar mixture.
  5. Make the cake:
  6. Preheat the oven to 350° F (177° C).
  7. Measure out 1 1/2 cup flour, 3/4 cup sugar, 1 tsp baking soda, 1/2 tsp cinnamon, and 1/4 tsp salt in a mixing bowl and give it a stir.
  8. Mix 1 cup plant-milk, 1 1/2 tsp apple cider vinegar, and 1/3 cup oil in a separate container and let it sit for a few minutes until the milk begins to curdle
  9. Stir the wet ingredients into the dry ingredients until they are well incorporated.
  10. Toss in 1/2 cup of diced apples and give another small stir.
  11. Spoon the cake batter over top of the caramel and apple layer so that you don't disturb your pattern.
  12. Bake the cake at 350° F (177° C) for about 35 minutes or until a toothpick inserted in the middle comes out clean.
  13. Allow the cake to cool for 10 minutes, slide a knife around the edges if they appear to be stuck, then invert the cake onto a plate. To do this, set a plate (or cake stand) on top of the cake, then quickly flip the cake over so that the cake pan is now sitting on the plate. Tap the cake pan and wiggle it slowly until the cake releases and you can pull off the pan.

  • 1/3 cup vegan butter, (melted (but not hot))
  • 1/3 cup brown sugar
  • 1 apple ((sweet/crisp variety like Fuji))
  • 1/3 cup vegan shortening
  • 1 cup vegan sugar
  • 1 cup dairy free milk
  • 1/4 cup unsweetened applesauce
  • 1 tsp vanilla
  • 1 1/3 cup flour
  • 1 tbsp baking powder
  • 2 tsp cinnamon
  • 1/4 tsp ground nutmeg
  • 1/8 tsp ground ginger
  • 1/8 tsp allspice
  • 1/2 tsp salt

How to cook:
  1. Preheat oven to 350°F.
  2. Pour melted butter into a 9-inch square pan.
  3. Take a little more softened butter and rub along the sides of dish.
  4. Sprinkle brown sugar evenly over the melted butter. (*See notes for alternative spiced topping)
  5. Peel, core and thinly slice apple.
  6. Layer the apple slices in a circular pattern or just lay them in the bottom, making sure they don't overlap a lot.
  7. Place the pan into the fridge (Don’t skip this step).
  8. In a bowl, cream together the vegan shortening and the vegan sugar.
  9. Add in the milk, vanilla, and applesauce and beat again until combined.
  10. Sift in the flour, baking powder, cinnamon, nutmeg, ginger, allspice, and salt. Beat together, scraping down as needed.
  11. Remove the pan from the fridge. Pour the batter over apples.
  12. Bake cake for 30-35 minutes or until a toothpick inserted comes out clean.
  13. Once done, very carefully remove from the oven and immediately place a heatproof serving plate upside down over cake pan. Flip the plate and pan over at the same time.
  14. Let sit like this for 5 minutes so the caramelized mixture drizzles down over the cake. Very gently remove the pan. Best served warm.
  15. Cake can be stored at room temperature in an air tight dish for up to 3 days.

  • 2 medium size apples (- rinsed, peeled, cored and sliced)
  • 2 to 3 tablespoon organic demerara sugar (or brown sugar or powdered sugar)
  • ¼ teaspoon cinnamon powder
  • ¼ teaspoon nutmeg powder
  • few drops of lemon juice
  • 1 cup organic whole wheat flour ((atta))
  • ½ cup organic all purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ¾ cup organic powdered jaggery (or organic unrefined cane sugar or powdered sugar - adjust as per your sweet requirements)
  • 1 pinch salt
  • ¼ teaspoon cinnamon powder
  • 1 teaspoon lemon juice
  • 1 cup water
  • ¼ cup sunflower oil or any neutral tasting vegetable oil
  • ½ teaspoon ground vanilla powder (or ½ teaspoon vanilla extract)
How to cook:

  3. Preheat the oven now at 180 degrees C or 356 degrees F for 15 minutes.
  4. Rinse, peel, core and slice the apples.

  11. Add the water and oil, stir and mix to get a lump-free batter. Do not overmix.
  12. Now add the lemon juice and stir well again.
  13. Pour the batter in the prepared cake pan/tin layered with the apple slices.

How to cook:
  1. Grease the cake tin used for this recipe. In a large bowl blend the vegan butter with the brown sugar and spread the mixture evenly in the cake tin.
  2. Cut the apple into slices and arrange the slices in the cake tin covering all the mixture.
  3. Preheat the oven to 180C / 350F
  4. In a large bowl mix all the dry ingredients: gluten-free flour, light brown sugar, baking soda, salt and cinnamon.
  5. In a separate bowl, mix the rest of the ingredients: coconut milk, vanilla extract, olive oil and white vinegar.
  6. Combine all the ingredients and mix well using a spatula. Pour the batter into the cake tin evenly and bake for about 25 minutes.
  7. Cover the cake with tin foil and bake for further 20-25 minutes.
