Applebee's Quesadilla Burger Recipe is a spicy Southwest-seasoned burger, topped with pico de gallo, shredded lettuce and Mexi-ranch sauce and served Southwestern-style in a Pepper-Jack and cheddar quesadilla. Make it at home with this recipe. Recipe makes 2 Burgers. Multiply as needed.

Ingredients:
- 1/2 pound ground Beef or Chuck
- 4 10- inch Flour Tortillas
- 4 tablespoons Butter (softened)
- 2/3 cup shredded Pepper Jack Cheese
- 2/3 cup shredded Cheddar Cheese
- 1 medium Tomato (chopped)
- 4 teaspoons diced Red Onion
- 2 teaspoons diced canned Jalapeño
- 2- 4 slices Bacon (cooked)
- Leaf Lettuce (as needed)
- Applebee's Southwest Seasoning Mix (Recipe below)
- Pico de Gallo, ( store bought or homemade)
- Applebee's Mexi-Ranch Dressing (Click the Link in the Notes to Make this Recipe)
How to cook:
- Up to 1 Day Ahead
- Prepare Applebee's Mexi-Ranch Dressing and Pico de Gallo (if making homemade). Store each in tightly sealed containers, in the refrigerator, until ready to use.
- Prepare Applebee's Southwest Seasoning Mix according to recipe below. Store in a tightly sealed container in the cupboard.
- When Ready to Cook
- In a medium large bowl, place ground meat and 1/2 heaping tablespoon Applebee's Southwest Seasoning Mix (Note - Use 1 heaping tablespoon of seasoning mix per pound of hamburger meat.) With your hands, mix seasoning into hamburger meat until well combined. Do not overwork the meat.
- Form the meat into 2 equal-sized patties.
- Fry or grill the burgers to desired doneness. Set aside and keep warm.
- Heat a large frying pan over medium heat.
- Spread 1/2 of the butter on one side of each tortilla.
- Place one tortilla, butter side down in the hot pan.
- Sprinkle 1/2 of each cheese evenly onto the center of the tortilla in the pan.
- Sprinkle 1/2 of each of the tomato, onion, lettuce and jalapeño over the cheese.
- Add 1 or 2 slices of bacon.
- Top with prepared seasoned burger.
- Cover with the other tortilla butter side up.
- When the bottom side is browned, about 45 - 90 seconds, flip the quesadilla and grill the other side.
- Remove the quesadilla from the pan. Set aside and keep warm while you repeat the cooking process for the second burger.
- When both are done, remove the top tortillas and sprinkle with pico de gallo and drizzle with Applebee's Mexi-Ranch Dressing, if desired. Replace the tops. Alternately, serve burgers with bowls of pico de gallo and Applebee's Mexi-Ranch Dressing on the side.
- Use a pizza cutter to cut through the middle like a pizza.

- 2 pounds ground beef (we used 96% lean ground beef)
- 12 street taco-size flour tortillas
- 12 slices cheddar cheese
- 1 1/2 cups Pico de Gallo
- 1 1/2 cups shredded lettuce
- 1/2 cup mayonnaise
- 1/2 cup ketchup

- Form 2 pounds of ground beef into 6 hamburger patties. To make them fit the flour tortillas better, make the patties thinner, with a diameter of about 4-5 inches. Grill the burgers on a preheated grill (400º Fahrenheit). The internal temperature should be at least 165º Fahrenheit.
- While the burgers are grilling, spray a frying pan with cooking spray. With the stove on medium-low, lightly toast the flour tortillas for about 2-3 minutes on each side. They should be light brown, and still a little chewy on the inside.
- Put one slice of cheese on a toasted flour tortilla. Place a burger over the cheese with another slice of cheese on top of the burger.
- For the sauce, mix the ketchup and mayonnaise. Mix in ¾ cup Pico de Gallo to the mayonnaise/ketchup mixture.
- Spread some of the sauce mixture on each burger, and top with another spoonful of Pico de Gallo and some lettuce. Top with another flour tortilla.
- Serve immediately. Enjoy!

- Mexi-Ranch Sauce
- Combine the sour cream, ranch dressing, salsa, and taco seasoning in a small bowl. Stir to combine.
- Quesadillas
- Preheat the oven to 200°F.
- Divide the cheese evenly among 8 tortillas. Cover the cheese with the 8 remaining tortillas.
- In a large non-stick skillet over medium heat, cook the quesadillas for about two minutes on each side until they are golden brown and the cheese is melted.
- Remove from the skillet and keep warm in the oven while you cook the burgers.
- Burger Patties
- Combine the ground chuck, salt, and black pepper in a bowl, and use your hands to incorporate. Divide the beef into 4 patties.
- With a paper towel, wipe out the non-stick skillet you used for the quesadillas, and cook the burgers over medium heat for 4 to 5 minutes on each side.
- Burger Assembly
- Place each burger patty on top of a quesadilla. Top each patty with 2 slices of pepper jack cheese, 2 slices of cooked bacon, pico de gallo, shredded lettuce, and Mexi-ranch sauce.

- Combine all seasoning ingredrients. Use one heaping Tblsp of seasoning mix per pound of hamburger meat. Mix into hamburger meat until well combined. Fry or grill. ( I used George Foreman grill).
- Assembling the complete burger:.
- Heat a large frying pan over medium heat. Spread butter on one side of each tortilla. Put one tortilla, butter side down in the hot pan. Sprinkle the cheeses evenly onto the center of the tortilla in the pan- but not all the way to the edges. Put the tomato, onion, bacon and jalapeno over the cheese, add the cooked seasoned burger and cover with the other tortilla butter side up (like a grilled cheese sandwhich). When the bottom is browned, about 45-90 seconds, flip the quesadilla and grill the other side. Remove the quesidilla from the pan and using a pizza cutter, cut throught the middle. Serve.
