- 2 cups sugar
- 3/4 cup oil
- 2 cups applesauce
- 1/2 cup sour cream or buttermilk
- 3 cups flour
- 1 tsp baking soda
- 1/4 tsp baking powder

- 1 cup chopped nuts (optional)
- 3/4 cup oats
- 3 Tbsp flour
- 1/4 cup + 2 Tbsp brown sugar
- 3/4 tsp cinnamon

- Use shortening and flour or Baker's Joy to grease six mini loaf pans or two large loaf pans. Line the bottoms with parchment. Set aside.
- Beat together eggs, sugar, and oil in a large mixing bowl. Mix in applesauce and sour cream. Combine dry ingredients and stir in. Add nuts if desired.
- Pour into your prepared loaf pans.
- Mix together the topping ingredients with a fork till crumbly. Sprinkle evenly over the loaves.
- Bake at 325° for 30-40 minutes for mini loaves, 60-70 minutes for regular loaves.

- 2 cups granulated sugar
- 3/4 cup canola or vegetable oil
- 3 large eggs
- 2 cups applesauce ((sweetened or unsweetened))
- 1/2 cup buttermilk
- 3 cups all-purpose flour

- Heat oven to 325°. Prepare two loaf pans (9-inch x 5-inch) OR six small loaf pans (3-inch x 5-inch) and spray with cooking spray or Baker's Joy (cooking spray + flour).
- In a large bowl, add granulated sugar, oil, and eggs. Mix together with a wire whisk until combined and smooth. Add the applesauce and buttermilk. Mix together until combined.
- Add the flour, cinnamon, baking soda, salt, and baking powder. Stir together with a spatula or wooden spoon just until combined and no flour streaks remain.
- Divide batter evenly between the prepared pans. Each loaf pan should be a little over halfway filled with batter.
- To make the streusel topping combine all ingredients into a small bowl. Use your hand or a small spoon to mix it all together until it forms a crumb mixture. Sprinkle over top the batter in the loaf pans.
- ** To get butter soft & slightly melted, microwave for 35 seconds and then add it to the streusel mixture.
- Cook the large loaf pans for 60-70 minutes (mine was done at 60 minutes) OR cook the small loaf pans for 30-40 minutes.
- ** You may want to loosely lay a piece of tin foil over the bread during the last 15 minutes of cook time to prevent over browning.
- Let cool in the loaf pan for at least 30 minutes. Serve warm or at room temperature. Extras can be stored, covered, at room temperature.

- Preheat your oven to 350 degrees. Spray a 9 inch bread pan with cooking spray

- In another medium bowl mix together the eggs, butter, yogurt, sugar, and vanilla.
- Mix the wet ingredients into the dry, being careful not to over-mix. Stir in the diced apples. Pour the batter into the prepared bread pan
- Mix the ingredients for the bread topping, the butter, brown sugar, oats, and cinnamon together in a small bowl with a pastry cutter or fork and sprinkle over the unbaked bread.
- Bake the bread for 60 minutes or until a a toothpick inserted into the middle of the bread comes out with just a few crumbs.
- After 10 minutes, remove from the bread pan and set on a cooling rack. Allow to cool completely before wrapping tightly in plastic wrap.

Ingredients:
- 1/4 C all purpose flour
- 2 Tb light brown sugar
- 1 Tb granulated sugar
- 1/2 tsp cinnamon
- 2 Tb unsalted butter (melted)
- 2 Tb vegetable oil
- 1/3 C applesauce
- 1/4 C light brown sugar
- 1/2 C granulated sugar
- 2 tsp cinnamon
- 1/2 tsp salt
- 1 1/2 tsp baking powder
- 2 large eggs
- 2 tsp vanilla extract
- 1 1/2 C carrots (finely shredded)
- 1 1/2 C all purpose flour
How to cook:
- Preheat oven to 350°F. Line a 9x5-inch loaf pan with parchment paper, leaving overhang on the long sides. Lightly grease remaining short sides of pan. Set aside.
- In a medium bowl, combine dry streusel ingredients. Pour in medlted butter. Blend together with a fork or spoon, breaking up larger pieces. Set aside.
- Finely shred carrots, chopping as desired to break up any larger pieces.
- In a large bowl or stand mixer, combine vegetable oil with applesauce. Mix in sugar, followed by eggs and vanilla. Mix until fully combined. Add cinnamon, salt and baking powder, mixing until just combined. Add carrots, followed by flour, mixing until no streaks remain. Pour batter into prepared loaf pan.
- Use a spoon to sprinkle streusel topping over batter.
- Bake for 55-60 minutes or until a toothpick inserted in the center comes out clean. Cool completely in pan.
- Carefully remove loaf by pulling up and outwards on parchment paper. Remove parchment paper and slice into desired thicknesses.
- Store in an airtight container for up to several days.
