  • 3 cups powdered sugar
  • 1/4 cup vegan butter
  • 1/4 cup agave ((use light coloured agave to keep the filling white))
  • 1 teaspoon peppermint extract
  • 1 1/2 cups vegan chocolate chips

How to cook:
  1. Line a large baking sheet with parchment paper.
  2. Use a hand mixer or stand mixer with a large bowl to beat the powdered sugar, vegan butter, agave, and peppermint extract together, making sure the butter gets completely mixed it. It may look very crumbly. Use your hands to gather up the mixture and form a ball. Knead it together a few times making sure everything is nicely incorporated, and the dough holds together nicely.
  3. Take 1 tablespoon of the dough and shape into a patty. I like my vegan peppermint patties nice and thick, but if you are more of a thin mint type of person, feel free to make them thinner. Lay the patties in a single layer on the parchment lined baking sheet. Repeat until you use up all the dough. Pop in the freezer for 15 minutes or longer to set.
  4. Melt the chocolate chips in a double boiler. Take one patty at a time and dip it into the chocolate, turning to evenly coat. Shake off excess chocolate then return the patty to the parchment lined baking sheet. I found using two forks, one in each hand, was the easiest method for dipping. If the patties start to soften before you finish coating them with chocolate, return the tray to the freezer to chill as needed. Once finished and all of the patties are chocolate coated, pop the tray back in the freezer set for about 10 minutes until the chocolate is completely set.

  • 12 oz. Vegan Dark Chocolate
  • 15 oz. Sweetened Condensed Coconut Milk
  • 1/2 Tsp Peppermint Flavor (Or About 1 Tsp Peppermint Extract)*
  • 2 Cups Vegan Powdered Sugar*

How to cook:
  1. Add your condensed coconut milk and peppermint flavor to a bowl. Using an electric mixer, gradually add the powdered sugar to the bowl while mixing (or else it may go everywhere!)
  2. Once combined, place in the freezer to harden, about an hour. Remove and lay out a baking tray covered with parchment paper. Coat your hands with powdered sugar and take bits of the coconut milk mixture, roll into balls and squish down onto the tray.
  3. Repeat with the rest of the mixture, coating hands with powdered sugar in between each one, and letting mixture chill again if it becomes too warm.
  4. Place in the freezer again to freeze, at least an hour or two.
  5. Heat your chocolate (I used the double boiler method) until runny, and using two forks, drop the coconut patty into the chocolate, flip to completely coat, shake off excess chocolate by tapping on the edge of the bowl, and place back on baking sheet.
  6. Repeat for remainder of candies, adding chocolate sprinkles before the chocolate sets if desired. Chill for at least 30 minutes and then enjoy! These do become soft at room temperature, so keep them in the freezer until ready to eat.

  • 1/4 cup melted coconut oil
  • 1/3 cup light corn syrup
  • 2 tsp peppermint extract
  • 3 cups powdered sugar
  • 1 cup dairy-free chocolate chips (Enjoy Life or Pascha are brands we like)
  • 1 Tablespoon dairy-free, soy-free shortening
  • Crushed peppermint candy canes, if desired
How to cook:
  1. In a stand mixer with the paddle attachment, mix the wet ingredients. Then, slowly add the powdered sugar. Allow it to stir for several minutes until it's clumpy and as together as it can be.
  2. Move the mixture to a clean surface and knead with your hands until it's a uniform ball. The warmth of your hands will help it become a solid mass.
  3. Using a cookie scooper, or eye balling it, form even patties with your hands. Place them on a cookie sheet with wax paper.
  4. In a microwave safe bowl, add the shortening and dairy-free chocolate chips. Microwave on high for 1 minute and then stir. Continue to do this in one minute increments until the chocolate is thoroughly melted.
  5. Drop one patty at a time into the melted chocolate mixture. Use a fork to gently turn it and make sure it's coated on each side.
  6. Place the freshly dipped patty back onto the wax paper. If desired, while it's still wet, sprinkle with crushed peppermint candy canes.
  7. Allow the chocolate to cool and harden before eating. If you need to speed up this process, you can place the tray in the fridge.

  • 1 1/2 tablespoons light corn syrup
  • 1 1/2 tablespoons water
  • 1/2 teaspoon peppermint extract (not peppermint oil)

  • 10 ounces dark chocolate melting wafers*

How to cook:
  1. On medium speed, beat 2 1/4 cups powdered sugar with corn syrup, water, peppermint extract, butter, and a pinch of salt with your stand mixer fitted with a paddle attachment.
  2. Knead on a work surface dusted with remaining 1/4 cup powdered sugar until smooth. Roll out between sheets of parchment paper into an 8 inch round (should be less than 1/4 inch thick).
  3. Place the round, including both sheets of parchment onto a baking sheet.
  4. Freeze for about 15 minutes to allow the filling to firm up.
  5. Remove the top sheet of paper and sprinkle the round with powdered sugar. Replace the top sheet, then flip round over and repeat sprinkling on the other side.
  6. Cut out as many rounds as possible with your round cutter as you can, then place them on a parchment-lined baking sheet and freeze until firm. I used a 1 3/4-inch diameter cutter. Yield will vary if you go bigger or smaller.
  7. Melt dark chocolate melting wafers following package instructions.
  8. Balance 1 peppermint round on a fork and submerge in melted chocolate, letting excess drip off and scraping back of fork against the rim of the bowl if necessary, then return patty to the sheet.
  9. Coat remaining rounds, rewarming chocolate if needed. Let patties stand until chocolate is set, about 1 hour.
