Ingredients:
- 800g/ 28 oz. boneless chicken thighs (or mixed thighs and breasts)
- 1 onion cut into rings
- 1 red pepper cut into rings
- 1/3 of a cup olive oil
- 1 tbsp dried oregano
- 2 tsps smoked paprika
- 1/2 tsp cumin
- 1 tsp honey
- 1 tablespoon lemon juice
- 1 clove of garlic, minced
- salt and freshly ground pepper
- 1 cucumber
- 2 cloves of garlic, minced
- 1/4 of a cup olive oil
- 500g of yogurt (18 ounces)
- 1-2 tbsps of red wine vinegar
- a pinch of salt
- 8 pita breads
- olive oil
- 1-2 tsps dried oregano
- 1 tomato, sliced
- 1 red onion, sliced
- fried potatoes (optional)
- romaine (cos) lettuce (optional)

- For the chicken gyro
- To prepare this chicken gyro recipe, start by preparing the marinade for the gyro. In a large bowl, combine marinade ingredients and stir well.
- On a cutting board, place a piece of plastic wrap over the chicken thighs and pound until about 1 1/2 cm thick with a meat mallet or heavy pan.
- In another large bowl combine chicken thighs and marinade, stirring well to coat. Cover with plastic wrap and refrigerate for at least 2 hours and up to one day.
- Preheat oven to 200°C (400°F).
- Skewer the chicken thighs individually on a spit (make sure to skewer them pretty tight). In between the chicken pieces skewer the onion and peppers.
- Bake for about 1- 1 and 1/2 hour, until internal temperature reaches 165°F (75°C)
- Let it rest for about 8 minutes and then carve slices with a sharp knife.
- For the tzatziki sauce
- In the meantime prepare the tzatziki sauce for the chicken gyro. Pour in a blender the olive oil and grated garlic and blend until combined.
- Remove the skin and seeds of the cucumber and grate it into a large bowl. Season with salt and pepper and leave aside for 10 minutes. Wrap the grated cucumber in a towel and squeeze, in order to get rid of the excess water.
- In a bowl, add the cucumber, the blended garlic and oil, the yogurt, 1-2 tbsps of red wine vinegar, a pinch of salt and blend, until the ingredients are combined.
- Store the tzatziki sauce in the fridge and always serve cold.
- To serve
- Prepare the pita breads. Preheat the oven to 250C. Use a cooking brush to oil the pita breads on both sides and season with salt and oregano. Place a large oven tray (upside down) at the bottom of the oven and place the pita breads on top of the tray. Bake for 2-3 minutes.
- Chicken gyro is usually served wrapped, like a sandwich. Spread some tzatziki sauce on the pita breads and top it with the chicken gyro, some slices of red onion, some sliced tomato and fried potatoes and wrap.
- For an easier version of this traditional Greek souvlaki with chicken gyro recipe you can serve with Greek yogurt or some mustard and mayonnaise sauce. Enjoy!

- How to Tenderize the meat & marinate it:
- Begin by pounding each chicken thigh with the help of a meat mallet until 1/2" or 1 cm thick. You can put each chicken thigh inside a ziplock and pound it with the mallet. Repeat this step with all the chicken thighs. Set aside.
- How to prepare the Marinade & marinate the gyro meat
- Add the paprika, coriander seeds, peppercorns, dried rosemary, dried red chili flakes & the coarse sea salt in a mortar & pestle. Grind it to a semi-coarse powder.
- Next add the chopped garlic to the semi-coarse powder & grind it until the garlic blends well with the rest of the spice blend.
- Now add the extra virgin olive oil & the lemon juice to the spice mix and mix everything with the help of a spoon. The marinade for the chicken gyro meat is ready.
- Add the marinade to the tenderized chicken thighs and mix very well until all the chicken thighs are well coated with the marinade.
- Wrap the container with a cling film and allow the chicken to sit in the marinade in the fridge for overnight or 1 day for best results. And if you are pressed for time leave the marinade for at least 2 hrs.
- How to make the home-made vertical rotisserie
- Take a large stump of an onion ( half onion) & stick a bamboo skewer in the middle of the stump to form a vertical pole. The vertical home-made rotisserie is ready. The base of the onion will act as the support & the bamboo skewer as the pole.
- How to skewer the meat & bake the chicken gyro
- Take each marinated chicken thigh and skewer them individually in the home-made vertical rotisserie. Repeat this step until all the chicken thighs are skewered and stacked on top of each other to form a small mound of meat.
- Pre-heat the oven at 375 F and bake the chicken gyro meat by placing the vertical rotisserie over a cookie tray for 1 hour. The baking time hugely depends on the oven used. So it's wise to check the internal temperature of the meat. When it reaches 165 F turn off the oven.
- Allow it to cool for 15 mins. Than, shave the chicken gyro meat & serve it with loads of Tzatziki sauce.

- Marinate chicken and prepare gyro fixings
- In a larger mixing bowl, combine the marinade ingredients, mix well. Add the chicken tenders and mix to make sure chicken is well coated with the marinade. Cover and refrigerate for 30 minutes (or refrigerate overnight.) Meanwhile, make Tztaziki sauce according to this recipe, and prepare the pita and other gyro fixings.
- Cook chicken
- Heat 1 tbsp extra virgin olive oil in a non-stick skillet over medium-high until shimmering but not smoking. Add chicken tenders to the pan (make sure to shake off any excess marinade before adding chicken to the pan.) Cook on one side undisturbed for 5 minutes until browned. Using a pair of tongs, turn chicken over and cook on other side for another 5 minutes or until chicken is done. (See notes for outdoor grilling)
- Assemble the chicken gyros
- Warm up some pita. Spread Tztaziki sauce on top, then add chicken (about 2 to 3 tenders) and top with tomato, cucumber, green pepper, red onion and olives as you like. Wrap the pita up and enjoy!

- Make the Tzatziki SauceMake this Authentic Greek Tzatziki Sauce a few hours in advance or overnight.
- Marinate the Chicken
- Measure the marinade ingredients and put them into a 1 gallon zip top bag, close the bag and then massage the bag to mix well.
- Add the chicken tenders to the zip top bag, close the bag and then massage the bag so that each chicken tender is well covered by the marinade.
- Place the bag in the refrigerator and let it marinate for at least 3 hours. 12 hours works the best, but don’t marinate it longer than 24 hours or your chicken will be too mushy.
- Warm the Pita Bread
- Preheat your oven to 250 degrees Fahrenheit.
- Just before you cook the chicken, place the pita breads on a baking sheet and place them in the oven to be warmed.
- Cook the Chicken
- You can cook the chicken on an outdoor grill or an indoor grill pan. Brush the grill / grill pan with olive oil, then preheat using medium high heat.
- After the grill / grill pan is hot, remove the chicken from the marinade bag and place on the grill / grill pan.
- Cook the chicken for 3 to 5 minutes on each side (cooking time depends on the size of chicken tenders), until they are golden brown and thoroughly cooked with an internal temperature of at least 165 degrees Fahrenheit.
- Remove the chicken from the grill / grill pan and place onto a cutting board. Cover with foil and allow to rest for 5 minutes.
- Slice the chicken tenders and put on a serving plate.
- Assemble the Gyros
- Lay out a warmed pita bread.
- Place sliced chicken down the middle of the pita bread.
- Top the chicken with an ample amount of tzatziki sauce.
- Garnish the top of the tzatziki sauce with cucumber, tomatoes, red onions, feta cheese and optionally parsley.
