  • Baby Rack Ribs
  • Kosher salt
  • Freshly ground black pepper
How to cook:
  1. Step 1
  2. Peel the membranes away from back side of the ribs and season the ribs on both sides with salt and pepper.
  3. Step 2
  4. When ready to cook, set the Traeger temperature to 225℉ and preheat with the lid closed for 15 minutes. For optimal flavor, use Super Smoke, if available.
  5. Step 3
  6. Insert the probe horizontally into the center of the meaty section of a rack of ribs, avoiding the bones. Set the ribs directly on the grill grates, meat-side up, and cook with the lid closed for 2 hours. Flip the ribs so the meat side is down and cook with the lid closed until the meat is tender and the internal temperature reaches 203-206°F, about 1 hour more. Enjoy!

  • dark brown sugar
  • Sea salt
  • pimentón (Spanish smoked paprika)
  • Freshly ground black pepper
  • granulated onion
  • granulated garlic
  • ground cumin
  • ground cinnamon
  • ground nutmeg
  • (2-2 1/2 lb) racks of baby back ribs
  • Traeger 'Que BBQ Sauce
How to cook:
  1. Step 1
  2. When ready to cook, set the Traeger temperature to 250℉ and preheat with the lid closed for 15 minutes.
  3. Step 2
  4. Make the rub: In a small bowl, whisk together the brown sugar, salt, pimentón, pepper, onion, garlic, cumin, cinnamon, and nutmeg.
  5. Step 3
  6. If your butcher has not already done so, remove the thin membrane from the bone-side of the ribs by working the tip of a paring or butter knife underneath the membrane over a middle bone. Use paper towels to get a firm grip, then pull the membrane off.
  7. Step 4
  8. Sprinkle the rub over both sides of the ribs, about 1 1/2 tablespoons per side.
  9. Step 5
  10. Insert the probe into the center of a rack of ribs, avoiding the bones. Place the ribs, bone-side down, directly on the grill grates. Close the lid and smoke the ribs the internal temperature reaches 203°F and the ribs are browned and very tender.
  11. Step 6
  12. Remove the ribs from the grill. Increase the Traeger temperature of the 375°F.
  13. Step 7
  14. Brush the ribs with Traeger ’Que BBQ Sauce on both sides. When the grill is hot, return the ribs to the grill, close the lid, and cook for 6-8 minutes per side, or until the sauce has set.
  15. Step 8
  16. Remove the ribs from the grill. Cut each rack into halves or individual ribs. Enjoy!
Notes: Traeger Smoked Baby Back BBQ Pork Ribs Recipe, Warm-up your smoker to 250 degrees and place the ribs directly on the rack. We're aiming for a done temperature of 190 degrees. It will take about 3 hours.

With these easy-to-follow steps, you too can make mouthwatering smoked baby back ribs in Traeger! These ribs are rubbed with a simple dry mix and smoked until fall-apart tender then basted with a homemade BBQ sauce. So good that you can’t stop eating!

  • 2 racks pork baby back ribs
  • ½ cup apple cider vinegar
  • 2 cups your favorite BBQ sauce ((we used Franklin’s BBQ recipe from his cookbook))
  • 2 Tbsp unsalted butter ((divided))
  • 4 Tbsp honey ((divided))
  • 4 Tbsp brown sugar ((divided))
  • 18 g 16-mesh ground black pepper
  • 9 g kosher salt (Diamond Crystal; use half for table salt)
  • 1 tsp onion powder
  • 1 tsp garlic powder

How to cook:
  1. Gather all the ingredients and equipment you need.
  2. To Prepare Dry Rub
  3. Add dry rub ingredients in a jar (18 g black pepper, 9 g kosher salt, 1 tsp onion powder, and 1 tsp garlic powder).
  4. Close the jar and shake well. I highly recommend this Maracasifter for sprinkling dry rub on ingredients evenly.
  5. To Prepare Ribs
  6. Remove the membrane from the back of the ribs by pulling it down with a paper towel (slippery!). We usually ask the butcher to do this when we purchase the ribs. If the meat is dry, add 1-2 Tbsp (15-30 ml) apple cider vinegar in a mister and spray the vinegar to wet the meat.
  7. Evenly sprinkle dry seasoning on meat including the edge, start with the bone side first. Let the meat rest for 1 hour at room temperature.
  8. After 45 min, pre-heat Traeger to 275ºF (135ºC).
  9. Create a metal cup with aluminum foil and pour 6 Tbsp (90 ml) apple cider vinegar inside.
  10. Once Traeger is at 275ºF (135ºC), place ribs meat side up along with the apple cider vinegar cup. Smoke for 2 hours.
  11. Meanwhile, make your favorite BBQ sauce at this time. We made a BBQ sauce using a recipe from Franklin Barbecue: A Meat-Smoking Manifesto cookbook).
  12. After 2 hours, mist apple cider vinegar on ribs.
  13. Brush on BBQ sauce on the meat side.
  14. Smoke for 15 min.
  15. After 15 minutes, flip ribs over, mist on the meat.
  16. Brush the BBQ sauce on the ribs and smoke for 15 min.
  17. Meanwhile, preheat the oven to 275ºF (135ºC). Prepare 2 layers of heavy-duty aluminum foil for each rib (leaving plenty of room to wrap the ribs).
  18. For each rib, cut up 1 Tbsp of butter into 4 pieces and spread on aluminum foil. Drizzle 2 Tbsp honey, add 2 Tbsp brown sugar.
  19. Mist with apple cider vinegar and pour BBQ sauce on top. Make the same aluminum sheet with butter, honey, sugar, apple cider vinegar, and BBQ sauce for the second rib.
  20. Take out the ribs from the smoker and transfer to the baking sheet lined with parchment paper.
  21. Lay the rib meat side down on the mixture.
  22. Spray the bone side with vinegar and brush BBQ sauce on.
  23. Carefully wrap the meat without puncturing the aluminum foil.
  24. Enclose the end of the aluminum foil so moisture can’t escape.
  25. Place the ribs on a baking sheet and bake in the oven for 2 hours.
  26. Take the ribs out and rest in the foil for 20 to 30 minutes. Enjoy the ribs with your favorite BBQ sauce.
