Ingredients:
  • 1 cup flour ( (plain flour or whole wheat flour or ½ & ½))
  • 1 ½ tsp baking powder
  • 2 tsps sugar
  • 2 pinches salt
  • 1/8 tsp cinnamon ( (optional) (use only true cinnamon))
  • 1 tsp vanilla extract
  • 1 banana (large ripe , (about 6 inches long))
  • 2 tsp oil ( or melted butter)
  • ¾ cup milk (+ 2 tbsp or water(use more if needed, I used coconut milk))
  • Butter ( or oil for cooking pancakes)

How to cook:
  1. Prepration
  2. Mix together flour, baking powder & salt. Set aside.
  3. Mash the banana very well with cinnamon and sugar. Add oil, vanilla and milk. Whisk the mixture very well until well combined.
  4. Add flour in 2 batches and mix just until well combined. Make sure the batter is lump free and of pouring but thick consistency.
  5. Making eggless banana pancakes
  6. Grease a pan well with oil or butter. Wipe off the excess oil. Heat the pan.
  7. When it is just hot, put on the flame to medium heat and Pour 1 ladle full of batter. Do not spread.
  8. Cover and cook for 1 to 2 mins. Drizzle butter around the edges.
  9. When the edges leave the pan, flip it and cook on the other side as well.
  10. Set this aside and repeat making more pancakes.
  11. Make sure the heat is not too much otherwise they will brown without cooking well.

How to cook:
  1. Take banana in a bowl, mash it with fork roughly till it is chunky.
  2. Now add in sugar, milk, vanilla and mix well.
  3. Add in flour, baking powder, cinnamon powder and mix well.
  4. Now add in melted butter and mix well.
  5. Heat oil in a pan for frying pancakes, take a ladleful of batter and pour it over the pan. Let it cook for a min on one side till bubbles form on top. Flip over and cook for few more sec.

These baby cereal pancakes are a healthy finger food for baby and have just three ingredients! Easy to make and great for the transition to solids. Perfect for baby led weaning; a great, iron-rich finger food.

Ingredients:
  • 1 medium-sized ripe banana (mashed nice and smooth)
  • 1 medium egg
  • ¼ cup rice or oatmeal baby cereal
How to cook:
  1. Stir all three ingredients together in a bowl.
  2. Heat a griddle (what I used!) or non-stick skillet over LOW heat. (I set mine to 275 degrees.) If the griddle is too hot, the pancakes WILL BURN AND STICK. If you're not wanting sticky or slightly malformed pancakes, you will need to use a nice layer of non-stick cooking spray or butter/coconut oil.
  3. Spoon batter onto griddle into desired size of pancakes. I like small pancakes because they make good finger foods! If it turns out your pancakes are too squishy or runny for your tastes, try adding a little extra rice cereal to firm them up so you can turn them more easily.
  4. Cook until bottoms are lightly browned. Flip over and cook until pancake is cooked through. I like to give them a squish with the spatula right after the flip to make them thinner and ensure they are well cooked through. It only took about a minute per side for my tiny pancakes! Since they are just banana, egg, and cereal, they will still have a VERY mushy consistency after being cooked through, which is why they're perfect for babies with no teeth! Check with a thermometer to make sure they're at 160 degrees if needed. You also have to watch them pretty closely or they will burn and stick to the griddle if you leave them on too long. They will be less mushy once cooled and refrigerated, if not served immediately.
  5. Serve with baby food fruit puree as topping or dipping sauce, if desired.

  • 1 cup Mashed Bananas (equivalent to 3 large bananas)
  • 1/4 cup Melted Coconut Oil
  • 1/4 cup Milk of Choice (can use breastmilk, baby formula, or dairy-free milk)
  • 1 cup Old-fashioned Rolled Oats (not quick oats!)
  • 1 teaspoon Baking Powder
  • 1/4 teaspoon Baking Soda
  • 1 teaspoon Lemon Juice (or apple cider vinegar)

How to cook:
  1. Preheat oven to 350°F (180°C). Line two 12-hole mini muffin trays with oil spray. Set them aside.
  2. Peel, mash the bananas with a fork and measure 1 cup - precision is important to avoid gummy muffins.
  3. Place the mashed bananas in the jug of a high-speed blender along with the remaining ingredients: coconut oil, milk, lemon juice, baking powder, baking soda, and rolled oats.
  4. Blend on high-speed - speed 10 of my Vitamix - for 1 minute, stopping every 20 seconds if needed to scrape down the sides of the jug. Keep blending until the batter is smooth and no bites of oats are showing.
  5. Fill the muffin holes with about 1-2 tablespoons of batter.
  6. Bake in the center rack of the oven until golden brown, and a pick inserted in the center of the baby muffins comes out clean - about 12-15 minutes.
  7. Cool them down immediately on a wire rack.
  8. Serve plain or with fruits and yogurt on the side.
  9. Storage
  10. Store in the fridge in an airtight container for up to 4 days or freeze in ziplock bags and thaw 3 hours before eating.
