Ingredients:
- 16 ounces pretzel bread, cut into 1-inch cubes (9-10 cups)
- 2 celery ribs, chopped
- 1 large onion, chopped
- 6 tablespoons butter, cubed
- 1 cup beer
- 1 pound bacon, cooked and crumbled
- 1 tablespoon plus 1 1/2 teaspoons minced fresh thyme
- Salt and pepper to taste
- 1 cup chicken broth
- 1 large egg
- 12 ounces Springside Beer Cheddar cheese, shredded (3 cups)
How to cook:
- Instructions
- Heat oven to 350°F.
- Place bread in a single layer on two rimmed baking sheets. Bake for 15-20 minutes or until toasted, turning once. Cool completely on a wire rack.
- Sauté celery and onion in butter in a large skillet over medium-high heat for 6-8 minutes or until tender. Reduce heat to medium; pour in beer. Bring to a boil; cook and stir for 2-4 minutes or until liquid is reduced to 1/2 cup. Remove from the heat. Stir in bacon and thyme. Season with salt and pepper to taste.
- Whisk chicken broth and egg in a large bowl. Add bread cubes and bacon mixture; toss until well coated. Fold in beer cheddar. Spoon into a greased 2-quart baking dish. Bake, covered, for 30 minutes. Uncover; bake for 15-20 minutes longer or until top is golden brown.

- 1 lb Cloverdale Bacon
- 2 tbsp. Butter, cut into 1/2" pieces
- 1 Large onion, chopped
- 4 Celery sticks, chopped
- Salt
- Pepper
- 1/2 cup Medium-bodied beer
- 10 cups Cubed French bread, dried overnight
- 1 cup Shredded white cheddar
- 1 tbsp. Fresh thyme
- 2 cups Low sodium chicken broth
- 1 tsp. Worcestershire sauce
- 2 Large eggs, beaten
- Freshly chopped parsley, for garnish
How to cook:
- Preheat oven to 425° and butter a 3-quart baking dish. In a large skillet over medium heat, cook bacon until crispy, about 8 minutes. Drain on a paper towel–lined plate, then chop.
- Add onion and celery to bacon fat in skillet and season with salt and pepper. Cook until soft, about 5 minutes. Add beer and simmer, scraping up any browned bits from bottom of pan, until almost evaporated, about 2 minutes. Add bread, 2/3 cup of cheddar cheese, thyme, and half of cooked bacon and toss to combine.
- Add broth, Worcestershire, and eggs and toss to combine.
- Scatter stuffing with remaining 1/3 cup cheddar cheese and cooked bacon and cover with foil. Bake until a knife inserted into center comes out warm, 45 minutes.

- 3/4 Cup Butter
- 2 Celery Stalks (Chopped)
- 1 Onion (Chopped)
- 1/2 Cup Beer
- 2 Eggs
- 1 tsp. Worcestershire Sauce
- 2 Cups Chicken Broth
- 10 Cups French Breads Cubes (Stale)
- 10 Bacon Slices (Cooked and Crumbled)
- 1 Cup Cheddar Cheese (Shredded)
- 2 tsp. Sage
- 1 Tbsp. Thyme
- Salt
- Pepper
How to cook:
- Preheat oven to 350˚F.
- Melt butter in a skillet, add celery, onion salt and pepper to taste. Cook for about 6 to 8 minutes, until vegetables are tender. Add in beer and bring to a simmer. Reduce liquid by half and remove from heat.
- In a small bowl whisk together eggs, Worcestershire sauce and chicken brother, and set aside.
- In a large bowl toss together French bread, 1/2 of the baco, 1/2 of the cheddar cheese, 1/2 Tbsp. Thyme and the sage. Pour vegetable mixture and broth mixture over bread and toss so bread gets saturated.
- Transfer to a prepared baking dish, cover with foil and bake for 40 minutes, remove the foil and bake another 20 minutes. Until it is crisped and a golden brown.

- Butter for greasing dish
- 8 slices bacon
- 1 large onion, chopped
- 4 stalks celery, chopped finely
- Kosher salt and fresh pepper
- 1/2 c medium bodied beer, IPA
- 10 cups cubed French bread, dried out
- 1 c shredded cheddar cheese, divided
- 1 T fresh rhyme leaves or 1 t dried or to taste
- 2 c chicken broth (I use Better than Bouillion)
- 1 t Worcestershire sauce
- 2 large eggs, beaten
- Parsley, for garnish
How to cook:

- Place stuffing in baking dish and sprinkle with reserved cheese and the other half of bacon. Cover with foil.
- Bake for 30 minutes and then uncover and bake 15 more minutes if you want crispy edges. Otherwise bake for 45 minutes covered, until a knife inserted in center comes out warm.
- Let rest 10 minutes and garnish with parsley before serving.
