  • 1 pound bacon – cut into small pieces
  • 2 large vidalia onions – sliced thin
  • 1/4 Cup light brown sugar
  • 1/2 Cup balsamic vinegar
  • Salt & Pepper to taste

How to cook:
  1. Cook bacon pieces in a large cast iron skillet. Drain the grease, leaving 2 – 4 tablespoons in the pan.
  2. In the same pan, add the sliced onions. Toss to coat with bacon grease. Over medium-low heat, cook the onions until they are a deep brown color and caramelized, stirring frequently. This will take about 45 minutes to an hour. Don’t rush it! The longer they cook the more flavor it will add.
  3. Add the brown sugar and balsamic vinegar to the pan. Don’t forget to scrape the bottom to get up all the good cooking bits. This adds flavor! lots of it!
  4. Continue to stir until the liquid reduces by about half. This will take about 5 minutes.
  5. Add salt and pepper to taste.
  6. Spoon the delicious Bacon Onion Jam into a mason jar and let it chill in the fridge until you are ready to add it to your perfect burger.
  7. Will keep for a week or two sealed in the fridge. (If it lasts that long!)

  • 1 lb of Bacon, chopped
  • 2 lb of Vidalia Onions, sliced
  • 3 Tbsp of Brown Sugar
  • 1/2 cup of Beer plus 1/4 cup of water or all water if you don’t want to use beer
  • 2 Tbsp of Balsamic Vinegar
  • Salt, to taste
How to cook:
  1. 1) Add the bacon to a shallow pot or large saucepan, turn onto medium heat, cook it until it becomes crispy and renders its fat, remove to a plate with a slotted spoon, discard all of the fat except for 4 Tbsp.
  2. 2) Add the onions, cook the onions for about 10 minutes with a lid on. Increase the heat to medium high, add the beer, allow it to cook for about a minute, then add the water, a good pinch of salt, brown sugar and cooked bacon.
  3. 3) Reduce the heat to medium low, cook for about 45 minutes (partially covered for about 20 minutes) then once ready, increase the heat to medium high, add the balsamic vinegar, cook for a minute or so, then allow to cool a bit and serve!

  • 1 pound thick-cut bacon (chopped into 1-inch pieces)
  • 2 medium sweet onions (diced)
  • 2 cloves garlic (minced)
  • ¼ cup balsamic vinegar
  • ⅓ packed cup brown sugar (or coconut sugar or Brown Swerve)
  • 1 tablespoons water

How to cook:
  1. Add chopped bacon to large skillet. Cook over medium heat, stirring frequently, until bacon is just crispy but still chewy. Be careful not to overcook!
  2. Transfer fully-cooked bacon to plate lined with paper towels. Drain all but 2 tablespoons bacon fat from skillet and discard or save for other uses.
  3. Add diced onions to skillet with 2 tablespoons reserved bacon fat. Stir well and cook approximately 10 minutes or until onions have caramelized.
  4. Once onions caramelize, add garlic, balsamic vinegar, brown sugar, and water. Return cooked bacon to skillet and stir well to incorporate ingredients.
  5. Reduce heat to low. Cook mixture approximately 10 to 15 minutes or until jam has thickened. Taste and adjust flavoring, adding brown sugar or salt as needed. Once satisfied, serve bacon jam warm or at room temperature with desired accompaniments.

  • ¾ lb bacon (chopped)
  • 2 medium onions (chopped)
  • ¼ cup balsamic vinegar
  • ⅓ cup brown sugar
  • 1 ½ teaspoon mustard seeds
  • ¼ teaspoon black pepper
  • ⅓ cup water
How to cook:
  1. Cook bacon in a heavy pot over medium heat until the fat has rendered out and the bacon begins to crisp about 15 minutes. Drain the fat.
  2. Add remaining ingredients, reduce heat to medium-low, and cover. Cook for 15 minutes or until the onions have softened, stirring occasionally. Remove lid and continue to simmer the chutney for about 30-40 minutes or until it resembles a dark chutney. Add more water while cooking if mixture becomes too dry.
  3. Remove from heat and let cool. Serve as desired or store in glass jars in the fridge.
