  • olive oil
  • 1/2 teaspoon Kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 medium avocado (cut in half, pitted and peeled)
  • 1/4 cup sour cream (or Greek yogurt)
  • 1/2 teaspoon Kosher salt
  • 1 cup diced fresh pineapple
  • 2 cups fresh blueberries
  • 1/2 medium onion (diced)
  • 1 medium jalapeno (deseeded and finely diced)
  • juice of 1 lime
  • 1/2 teaspoon Kosher salt

How to cook:
  1. For the mahi mahi:
  2. Preheat oven to 350º F. Drizzle olive oil onto rimmed sheet pan and arrange mahi mahi filets on pan. Drizzle top of mahi mahi with additional olive oil and then sprinkle with salt and pepper. Cover with a sheet of parchment paper and place into the oven to bake for 20 minutes or until this fish is completely opaque and flakey.
  3. For the avocado crema:
  4. Place avocado, sour cream and salt into a blender. Pulse until creamy. Pour into a glass container and place plastic wrap tightly onto the surface of the crema if not using immediately. Refrigerate for up to 2 hours.
  5. For the pineapple blueberry salsa:
  6. Add pineapple, blueberries, onion, jalapeno, lime juice and salt to a small bowl. Mix together until well-combined. Store in an airtight container in the refrigerator up to 2 days.
  7. To serve mahi mahi with pineapple blueberry salsa:
  8. Remove mahi mahi from the oven and discard parchment paper. Spoon a few spoonsful of the avocado crema on top of the mahi mahi and then top with pineapple blueberry salsa. Serve immediately.

  • 3 tablespoons butter, melted (optional)
  • 1/2 teaspoon ground ginger

  • 1/4-1/2 teaspoon pepper
  • 1/4 teaspoon paprika
  • 8 orange slices
  • 20 ounces crushed pineapple, partially drained-you still want some juice

How to cook:
  1. Preheat oven to 375. Lightly grease one or two (you'll probably need two) baking dishes.
  2. Wash and pat dry Mahi Mahi fillets and lay them in a single layer in the baking dishe(s).
  3. Drizzle fillets with lemon juice, then melted butter (if using it). Sprinkle evenly with the ginger, salt, pepper, and paprika.
  4. Place an orange slice over each fillet.
  5. Evenly pour the crushed pineapple over all the fillets.
  6. Bake at 375 for about 20-30 minutes or until fillets are opaque; do not overbake.

Ingredients:
  • 10 to 12 ozs mahi mahi fillet
  • 2 tbsp olive oil
  • 1 tbsp soy sauce
  • 1 tsp rice wine vinegar
  • 1.5 cups fresh pineapple, diced into 1/2 inch cubes
  • 1 tsp serrano pepper
  • tbsp cilantro, finely chopped
  • 1 tbsp lime juice
  • 1 scallion, finely chopped (optional)
  • dash of salt
How to cook:
  1. Make a quick marninade: combine the olive oil, soy sauce and rice wine vinegar in a bowl.
  2. Add the mahi mahi to marinade. Gently turn the mahi mahi over once or twice so that it gets well coated with the marinade. Set aside for about 10 minutes.
  3. Make the pineapple salsa: combine the pineapple, serrano pepper, cilantro, lime juice, scallion if using. Add a dash of salt, and stir. Set aside until the fish is ready.
  4. Spray a skillet with cooking oil and heat the pan on medium high. If you are using a thick piece of fish, pre-heat the oven to 400 degrees in case you need to finish cooking it there.
  5. When the pan is good and hot, remove the mahi mahi from the marinade and gently shake off some of the excess marinade. Place the fish skin side down, and cook for 5 minutes without moving the fish. The skin will be getting nice and crispy underneath.
  6. Use a spatula to turn the fish over to cook with the skin side down for 3 to 4 minutes.
  7. Turn the fish back to the skin side one more time, and cook for another 2 minutes. At this point, gently cut open the fish at a thick spot to check for doneness. You want to get it so it has turned white throughout, but not overcooked. When the fish is cooked sufficiently, remove from the pan to a plate, and loosely tent with foil. Let it rest a couple of minutes, letting it cook a bit more.
  8. Note the actual time will depend on the thickness of your fillet. The pan searing alone works well for a fillet of about an inch. A thicker cut of fish can be finished by roasting for 3 to 4 minutes in a 400 degree oven.
  9. Serve the mahi mahi with pineapple salsa. Enjoy!

How to cook:
  1. Prepare Gingered Pineapple Marinade by mixing all ingredients.
  2. Remove 1 cup of the marinade; cover and refrigerate remaining marinade for basting.
  3. Cut fish into 4 serving pieces.
  4. Place fish in shallow glass or plastic dish.
  5. Pour 1 cup marinade over fish.
  6. Cover and refrigerate, turning once, at least 2 hours but no longer than 12 hours.
  7. Generously spray grill rack with nonstick cooking spray before heating grill.
  8. Heat coals or gas grill.
  9. Remove fish from marinade; discard marinade.
  10. Cover and grill fish and pineapple about 4 inches from medium heat 8 to 12 minutes, brushing frequently with reserved marinade and turning once, until fish flakes easily with fork.
  11. If pineapple becomes too brown, remove from grill.
  12. Discard any remaining basting marinade.
  13. Makes 4 servings.
