- 12-14 chicken wings, cut into sections
- 1 cup buttermilk
- Cornstarch to coat the chicken wings
- Salt and pepper to taste
- 3/4 cup flour
- 1/2 cup milk
- 2 eggs, beaten lightly (1 per lb. of branches).

- In a mixing bowl, mix 1 cup buttermilk, 2 eggs, and 1/4 cup of flour until there are no lumps.
- In another mixing bowl, combine the cornstarch, flour, and milk until all the ingredients are completely blended. Add this mixture to the buttermilk mixture.
- Cover your plate with wax paper or plastic wrap and place one chicken wing on this plate. Now, cover the wing completely with the flour mixture. Repeat this one at a time until all the branches are coated.
- Take the plate and put it in a bowl to catch any drips from each wing. Put wings in an air-tight container and place them in the refrigerator for at least 20-30 minutes to rest (This is optional but recommended).
- Preheat oven to 400°F. Line a baking sheet with aluminum foil and lightly coat the bottom of the pan with cooking spray.
- Add salt and pepper to each wing, coating it well.
- ake each wing out of the refrigerator and place them on a wire rack until they get warm (this is optional but recommended). This will allow them to cook evenly and absorb extra flavor from the flour mixture).
- Place chicken wings in the oven and bake them for about 20 minutes. After 20 minutes, flip the wings and toss them in the oven for another 20-30 minutes. This will allow both sides to cook evenly and thoroughly.
- While baking the chicken wings, mix 3/4 cup flour, 1/2 cup milk, 1 tablespoon salt, and 1 teaspoon black pepper in a saucepan for about 7-10 minutes or until thickens (whisk constantly).
- After wings are done baking, coat them with the honey mustard sauce and serve immediately.

- To Make the Chicken Wings
- Prepare baking sheet and chicken wings.
- Preheat the oven to 425°F. Place a wire rack inside of a rimmed baking sheet and spray the rack with cooking spray. Pat the chicken wings dry with a paper towel and place them into a large mixing bowl.
- Make the baking powder seasoning for the chicken wings.
- In a small mixing bowl, whisk together the baking powder, black pepper, garlic powder, salt, and lemon zest. Sprinkle the baking powder mixture over the chicken wings and toss the wings until they're evenly coated with the seasonings.
- Bake the chicken wings.
- Place the chicken wings in a single layer on the wire rack and bake for 40 minutes, turning halfway through. While the chicken wings are baking, make the glaze.
- For the Honey-Lemon Glaze
- Make the honey-lemon glaze.
- Heat the olive oil in a saucepan over medium-low heat. Add the grated garlic and lemon zest and allow them to simmer in the oil for 1-2 minutes or until fragrant. Pour in the lemon juice, honey, salt, and pepper and simmer for 5-7 minutes.
- Whisk in the cornstarch slurry.
- In a small mixing bowl, whisk together the cornstarch and water to make a cornstarch slurry. Slowly whisk the slurry into the glaze and simmer for an additional 1-2 minutes or until thickened. Remove from heat and set aside.
- Toss the chicken wings with the honey-lemon glaze.
- Remove the chicken wings from the oven after 40 minutes and allow them to rest for 5 minutes before transferring them to a mixing bowl. Pour the honey-lemon glaze over the chicken wings and toss to coat. Serve immediately.
