This quick and easy skillet-baked ziti is loaded with melty mozzarella and chunks of browned turkey. To make this baked ziti dish a little less guilty, I use ground turkey and add a carrot to the sauce.

Ingredients:
  • 1 pound ground turkey
  • 1 clove garlic, minced
  • ¾ cup fresh bread crumbs
  • ½ cup finely diced onion
  • 3 tablespoons chopped, toasted pine nuts
  • ½ cup chopped fresh parsley
  • 1 egg, lightly beaten
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 4 tablespoons olive oil
  • 1 (16 ounce) package ziti pasta
  • 1 ½ cups mozzarella cheese, shredded
  • 1 cup grated Romano cheese
  • 6 cups tomato sauce
  • 1 pint part-skim ricotta cheese

How to cook:
  1. In a bowl, stir together turkey, garlic, bread crumbs, onion, pine nuts, parsley, egg, salt and pepper. Form into meatballs about 1 inch in diameter.
  2. In a large heavy skillet, heat 2 tablespoons oil over moderately high heat until hot but not smoking. Cook half of meatballs, shaking skillet, until browned and cooked through, about 4 minutes. Transfer meatballs to paper towels to drain. Brown remaining meatballs in remaining 2 tablespoons oil in same manner.
  3. Preheat oven to 375 degrees F (190 degrees C). Oil a 3 to 4 quart gratin dish.
  4. Bring a large pot of salted water to a boil. Add the pasta, and cook until just al dente, about 8 minutes. Drain.
  5. In a small bowl, toss together mozzarella and Romano cheese.
  6. Spoon about 1 1/2 cups tomato sauce and half the meatballs into prepared dish, and spoon half the pasta on top. Spread half remaining sauce and half cheese mixture over pasta. Top with remaining meatballs, and drop dollops of ricotta over meatballs. Spread remaining pasta over ricotta, and top with remaining sauce and cheese mixture. Bake in middle of oven for 30 to 35 minutes, or until golden. Let stand 10 minutes before serving.

  • 1 pound lean ground turkey

  • 1 carrot, chopped

How to cook:
  1. Preheat the oven to 350 degrees (175 degrees C). Lightly butter a 9x13-inch baking dish.
  2. Bring a large pot of lightly salted water to a boil. Add ziti pasta and cook until al dente, about 8 minutes. Drain.
  3. Heat a large skillet over medium heat; cook and stir onion and ground turkey until onion is translucent and turkey is no longer pink, about 7 minutes. Add spaghetti sauce and carrot; simmer until heated through, about 15 minutes. Layer ingredients into the prepared baking dish as follows: 1/2 of the ziti, Provolone cheese, sour cream, half of the sauce mixture, remaining ziti, mozzarella cheese, and remaining sauce mixture.   • 1 lb Jennie-O Ground Turkey Meat
  • 1 lb box Ziti pasta, whole wheat
  • 15 oz Part-Skim Ricotta Cheese
  • 1/2 cup parmesan cheese
  • 1 egg,slightly beaten
  • 28 oz can organic crushed tomatoes
  • 6 oz. can of organic tomato paste
  • 3/4 teaspoon of garlic powder
  • 3/4 teaspoon onion powder
  • 1/2 tablespoon fresh basil, chopped
  • 1/2 tablespoon fresh parsley, chopped
  • 8-10 oz shredded mozzarella cheese
  • Salt + pepper

How to cook:
  1. Boil pasta, drain and set aside. In a medium skillet brown turkey.
  2. In a large bowl combine crushed tomatoes + fresh herbs + tomato paste + salt & pepper to taste, and browned turkey meat.
  3. Add cooked ziti noodles and mix well. Set aside.
  4. In a medium bowl combine ricotta, egg, parmesan cheese, 1/2 of mozzarella cheese and onion and garlic powder. Mix well.
  5. Grease a 9x13 baking dish. Layer 1/3 of turkey/ziti mixture, and dot with spoonfuls of ricotta all over 1st layer.
  6. Repeat two more times. Cover with remaining mozzarella cheese.
  7. Bake in a preheated 350° oven for 30 minutes or until bubbly and cheese is golden.
  8. Let stand for 5-10 minutes after cooking.
  9. Just add garlic bread + salad, and dinner is DONE!
