  • 1 3/4 cups all-purpose flour
  • 2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp salt (reduce slightly if using salted butter)
  • 1/3 cup butter (at room temperature )
  • 2/3 cup white sugar
  • 2 large eggs (at room temperature)
  • 1 cup bananas (mashed, about 2 medium, very-ripe bananas )

How to cook:
  1. Preheat oven to 350F (not fan-assisted/convection) with rack in centre of oven. *Reduce oven temperature by 25F for glass pans.
  2. Prepare an 8.5 x4.5-inch metal loaf pan (at least 2 1/2 inches deep) by spraying with cooking spray, then lining the bottom and sides with a sheet of parchment paper that extends about 1-inch over the sides, to use as handles to remove the loaf after baking. Set aside.
  3. In a medium bowl, whisk together well the flour, baking powder, baking soda and salt. Set aside.
  4. In a large bowl with an electric mixer or the bowl of a stand mixer fitted with the paddle attachment, cream together the room temperature butter and sugar until the mixture is light and fluffy, about 2-3 minutes.
  5. Add the eggs, one at a time, beating well between each addition and scraping down the sides and bottom of the bowl as needed.
  6. With mixer on low, add the flour mixture, alternately with the mashed bananas (add 1/3 flour mixture, then 1/2 the bananas, then more flour, then remaining banana, ending with the remaining flour). Mix until well combined, then give it a quick, 15-second beat.
  7. Pour batter into prepared 8x4-inch loaf pan and level top.
  8. Bake in preheated oven for 45-55 minutes, or until a tester inserted in the centre comes out clean. *Start checking the loaf at about 40 minutes. If the top is still quite pale, no need to test. Start testing when the top is cracked and turning golden.
  9. Remove from oven and allow to cool in the pan on a cooling rack for 10 minutes, then remove from the baking pan, gently remove the parchment paper and allow to cool further or completely on a baking rack.

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon

  • 1 1/2 cups mashed brown bananas, you will need 3 large or 4 medium brown bananas
  • 1/4 cup unsalted butter, melted and slightly cooled
  • 1/4 cup vegetable oil, can use canola oil or melted coconut oil
  • 3/4 cup packed light brown sugar
  • 1 large egg, at room temperature
  • 1 teaspoon pure vanilla extract
  • 2 tablespoons Turbinado sugar, for sprinkling on top

How to cook:
  1. Heat your oven to 350°F. Grease a loaf pan (preferably 8×4) with nonstick cooking spray and set aside.
  2. In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon. Set aside.
  3. In a large bowl, mash the ripe bananas with a fork. Add the melted butter and oil and stir until combined. Stir in the brown sugar, egg, and vanilla extract. Stir until smooth.
  4. Stir the dry ingredients into the wet ingredients, don’t over mix. If you over mix the bread will flatten and end up heavy.
  5. Pour batter into prepared pan. Sprinkle generously with turbinado sugar, if using. Bake for 50-65 minutes, or until a toothpick inserted into the center of the bread comes out clean. Check the bread at 50 minutes, just to be safe. Oven times vary.
  6. Remove the pan from the oven and set on a wire cooling rack. Let the bread cool in the pan for 10 minutes. Run a knife around the edges of the bread and carefully remove from the pan. Let the bread cool on the wire cooling rack until slightly warm. Cut into slices and serve.

How to cook:
  1. Preheat oven to 325 degrees F.
  2. If necessary, grease/spray the bread pan or use baking parchment paper to line the bread pan.
  3. Mash bananas with a fork.
  4. Lightly beat eggs.
  5. Soften the butter in a microwave.
  6. Stir eggs, milk, bananas and butter together.
  7. Mix in remaining ingredients. Stir until the batter is fully mixed.
  8. Optional – If you want to enhance this 2 banana bread recipe, you can stir in 1 cup of your family’s favorite dessert ingredient (i.e. chocolate chips or chopped walnuts) after you have mixed the batter.
  9. Pour the finished batter into a nonstick bread pan. Smooth out the top of the batter within the bread pan.
  10. Bake in the oven for 60-65 minutes or until golden brown.
  11. Take bread pan out of oven and let the banana bread cool down in the bread pan for 10 minutes. Do not remove the banana bread from the bread pan during this 10 minute cool down period. Use oven mitts as the bread pan will be very hot coming out of the oven.
  12. Optional - Right after taking the bread pan out of the oven, use a long wooden skewer to test if the banana bread is completely cooked. Wear oven mitts as the bread pan will be hot. See the tips section for more details on this classic "toothpick" test.
  13. After 10 minutes, remove the banana bread from the bread pan. Place the banana bread on a cooling rack in order to completely cool. This cool down may take 1-2 hours. Gently slide a silicon spatula between the banana bread and the bread pan walls if the banana bread is stuck in the pan.

How to cook:

  2. Peel and thaw frozen bananas in a microwave. Reserve all the juices and everything.
