Ingredients:
  • 2 medium ripe bananas, mashed
  • 150g butter, melted
  • 2 medium eggs, beaten
  • 1tsp vanilla extract
  • 3tbsp milk
  • 250g self raising flour, sifted
  • 100g light brown sugar
  • 1tsp baking powder
  • 1tsp bicarbonate of soda
  • 1tsp ground cinnamon
How to cook:
  1. Preheat the oven to 200C (gas mark 6)
  2. In a bowl, mix together the mashed bananas, melted butter, beaten eggs, vanilla extract and milk.
  3. In a separate bowl, mix together the self raising flour, light brown sugar, baking powder, bicarbonate of soda and ground cinnamon.
  4. Make a well in the centre of the dry ingredients and pour the wet ingredients from step 2 in the middle.
  5. Gently combine the ingredients until they are mixed together. Don't over mix.
  6. Line a tray with 12 muffin cases.
  7. Fill each muffin case with the banana muffin batter, filling each one almost up to the top.
  8. Bake in the preheated oven for 5 minutes and then turn the heat down to 180C (gas mark 4) and cook for a further 15 to 20 minutes. When the banana muffins are ready they will be golden brown and have risen above the muffin case.
  9. Transfer to a wire rack to cool. Banana muffins also taste amazing when they are still warm!

  • 175 g (¾ cup) caster sugar

  • 2 bananas
  • 225 g (1 ½ cup) self raising flour

How to cook:
  1. Mix all the banana bread muffin ingredients together

  7. Pop your banana muffins in the oven for 20-25 minutes. They're ready when they've turned golden and a skewer or sharp knife put in the middle comes out clean.

  • 2 Bananas
  • 140 g Caster Sugar
  • 55 g Butter (softened)
  • 1 Egg
  • 1 tsp Vanilla Extract
  • 3 tbsp Milk
  • 225 g Self-raising Flour
  • 1 tsp Baking Power
  • 300 g Icing Sugar
  • 50 g Butter (at room temperature)
  • 100 g Cream Cheese (at room temperature)
How to cook:
  1. For the Cupcakes
  2. Pre-heat your oven to 170°c (150°c for fan-assisted oven or Gas Mark 3) and line a muffin tray with twelve cupcake cases.
  3. In a large bowl, mash the bananas before adding the butter and sugar. Mix well until combined.
  4. In a separate bowl (or mug) whisk the egg, milk and vanilla before adding to the mixture.
  5. Sift the flour and baking powder into the mixture and gently fold to form a batter.
  6. Using an ice cream scoop, transfer the batter to your prepared cupcake cases, filling each to about 2/3 full.
  7. Bake in your pre-heated oven for 15-20 minutes, until risen, golden and a skewer inserted comes out clean.
  8. Once cool enough to touch, transfer to a wire rack to cool completely.
  9. For the Icing
  10. In a large bowl, mix the icing sugar, cream cheese and butter together until light and fluffy.
  11. Once your cupcakes are completely cool, pipe or spread the icing on top of each.
