Ingredients:
  • 1½ cup all purpose flour
  • 1 tsp baking soda
  • ¼ tsp cinnamon
  • ⅛ tsp ground nutmeg
  • ½ tsp salt
  • ¼ cup butter (melted)
  • ¾ cup brown sugar
  • ¼ cup white sugar
  • 1 egg
  • ⅓ cup bananas (mashed)
  • ½ cup white chocolate chips
How to cook:
  1. In a large bowl, combine the melted butter, mashed banana, egg, and the vanilla together.
  2. Add in the brown and white sugars.
  3. Add in the flour mix & combine until fully mixed. Fold in the white chocolate chips.
  4. Cover the dough with plastic wrap, and set in the fridge for 2-48 hours.
  5. Preheat the oven to 350°F. Using a cookie scooper, scoop out cookie dough, size the balls about 1-2 inches wide, & place balls 2-3 inches apart.
  6. Bake for 11-12 minutes. Take the cookies out & let them cool for 10 minutes. Drizzle melted chocolate over them & enjoy!

  • 3/4 cup butter
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar (packed)
  • 1 egg yolk
  • 1 teaspoon vanilla extract
  • 1/3 cup banana (mashed (about 1 medium banana))
  • 1 teaspoon lemon juice
  • 2 cups all-purpose flour

How to cook:
  1. Brown the butter: Place the butter in a medium saucepan over medium heat. Once the butter has melted, continue cooking, swirling the pan often, until the butter begins to foam. This will take about 6-8 minutes. Once the butter has turned a light brown color and smells nutty, remove from the heat and keep whisking until it turns a rich brown color. Transfer the butter to a bowl, making sure that you scrape down the brown bits from the bottom of the saucepan. Allow the brown butter to cool for about 30 minutes before using.
  2. Place the brown butter in a large mixing bowl. Add the granulated and brown sugar and whisk to combine.
  3. Next, add the egg yolk and vanilla extract to the butter/sugar mixture. Whisk well to combine.
  4. Mash the banana with the lemon juice, and then add to the rest of the ingredients. Mix well to combine.
  5. In a separate bowl, combine the flour, baking soda, and salt. Add the dry ingredients to the brown butter mixture and mix until combined.
  6. Finally, stir in the white chocolate chips until they are evenly distributed throughout the cookie dough.
  7. Use a cookie scoop (No. 40) to drop 1.5 tablespoon-sized dough balls onto a parchment lined baking sheet. Cover the cookie dough tightly with plastic wrap and chill for at least 1 hour. (If you are in a rush, you can chill the cookie dough for a minimum of 30 minutes).
  8. Preheat oven to 350°F. Line two baking sheets with parchment paper.
  9. Place the chilled cookie dough balls 2 inches apart (no more than 10 cookies per tray). Bake the cookies for 10-12 minutes, until they are golden and centers are still soft. Remove from oven and cool cookies on baking sheet for 5 minutes before transferring to a wire rack.

  • ¾ cup light brown sugar, packed

How to cook:

  6. Use the remaining ¼ cup of white chocolate chips to press extra chocolate chips into the top of each cookie. Use hands to shape cookies into round balls (do not flatten).
  7. Place the tray of cookies in the refrigerator for at least 1 hour (or in the freezer for at least 10 minutes).
  8. Preheat the oven to 350° F and line a second baking sheet with parchment paper or a silicone baking mat. Take some cookies out of the freezer and place on the baking sheet at least 3 inches apart.
  9. Bake the cookies, one tray at a time, for 10 to 12 minutes or until cookie edges are set. (The tops of cookies will still look slightly wet but that’s okay – they’ll continue to bake on the cookie sheets once removed from the oven.)
