  • 1 teaspoon baking powder
  • 1 teaspoon salt

  • 1 quart vegetable oil for frying
  • 1 ½ pounds cod fillets

How to cook:
  1. Place potatoes in a medium bowl and cover with cold water.
  2. Mix together flour, baking powder, salt, and pepper in a separate medium bowl. Add milk and egg; stir until batter is smooth. Let stand for 20 minutes.
  3. Heat oil in a large pot or electric skillet to 350 degrees F (175 degrees C).
  4. Drain and pat dry potatoes. Fry in hot oil until tender, about 5 minutes; drain on paper towels.
  5. Dredge fish in batter, one piece at a time, and place in hot oil. Fry until golden brown or internal temperature reaches 145 degrees F (63 degrees C); drain on paper towels. Monitor oil temperature, increasing the heat as needed to maintain 350 degrees F (175 degrees C).
  6. Fry potatoes again in hot oil until crisp, 1 to 2 minutes; drain on paper towels.

Basic fish batter contains only four simple ingredients, but produces the crispiest battered fish that you can imagine. Unlike many fish batter recipes, this basic fish batter contains no beer. Also, it doesn't contain spices that will mask the delicate taste of the fish.

How to cook:
  1. Whisk together flour, baking powder and salt in a medium bowl. Add water; whisk until the fish batter is smooth.
  2. Heat oil in a deep skillet over medium-high heat to 360°F. Dip fish into batter, allowing excess to drip off. Place in hot oil. Cook until golden brown on one side, about 5 minutes. Turn and cook on the other side until golden brown, another 5 minutes. Drain well. (See Tip 4)

  • 1 cup plain mayonnaise
  • 2 tsp capers, chopped
  • 2 tsp sweet pickle relish
  • 1 tsp honey
  • 1 tsp Worcestershire sauce

  • 1 cup all-purpose flour

How to cook:
  1. Combine dry ingredients.
  2. Add the egg and soda water and whisk together just until the liquid is incorporated. Small lumps in the batter are not a problem.
  3. Cut the fish into about 8 pieces. Season the fish with salt and pepper on both sides.
  4. Dredge the fish pieces in additional rice flour to help the batter stick to the fillets. Dip the pieces into the batter and carefully drop them into canola oil filled deep fryer that has been preheated to 375 degrees F.
  5. Fry for a few minutes, about 5 is fine depending on the thickness of the fillets; just until golden brown on both sides. Drain on a wire rack placed over a cookie sheet. Serve immediately.
  6. If you have to fry the fish in more than one batch at a time, hold the fish in a 200 degree F oven on the draining rack to provide air circulation all the way around the fried fish pieces to prevent the fish from getting soggy.
  7. Stir all ingredients together until well blended.
  8. Let sit in the fridge for an hour or more to let the flavors meld before serving with the fried fish.

  • 1 cup all-purpose flour
  • 2 tablespoons cornstarch
  • ½ teaspoon baking soda
  • 6 ounces beer
  • 1 egg (beaten)
  • ¾ cup all-purpose flour
  • ½ teaspoon paprika
  • 1 teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • pinch cayenne pepper
  • 1½ pounds cod (at least 1½-inches thick, cut into 4 or 5 pieces)

How to cook:
  1. Combine the 1 cup of flour, cornstarch and baking soda in a large bowl. Add the beer and egg and stir until smooth. Cover the bowl of batter with plastic wrap and refrigerate for at least 20 minutes.
  2. Combine the ¾ cup of flour, paprika, salt, black pepper and cayenne pepper in a shallow dredging pan.
  3. Make sure your pieces of fish are at least 1 to 1½ inches thick so they don't dry out in the air fryer. Pat the cod fish fillets dry with a paper towel. Dip the fish into the batter, coating all sides. Let the excess batter drip off and then coat each fillet with the seasoned flour. Sprinkle any leftover flour on the fish fillets and pat gently to adhere the flour to the batter.
  4. Pre-heat the air fryer to 390°F.
  5. Generously spritz both sides of the coated fish filets with vegetable oil and place them in the air fryer basket. Air-fry for 12 minutes at 390ºF. Spritz with more oil during the cooking process if there are any dry spots on the coating.
  6. Serve immediately with lemon wedges, malt vinegar and tartar sauce. It’s perfect with some air-fried French fries and coleslaw too!
