  • 1 head of garlic
  • 2 cubes of chicken broth
  • ½ teaspoon cumin
  • 3 onions, julienned
  • 1 cup of oil
  • 4 boiled eggs
  • 150 grams of botija olives
  • 1 pinch of salt and pepper
  • 1 pinch of oregano
  • 2 chopped yellow peppers
  • 3 teaspoons ground yellow pepper
  • 3 teaspoons of ground panca chili
  • 3 tablespoons of vinegar
  • 3 cooked purple sweet potatoes

Bean Escabeche
Escabeche is a very convenient dish. Usually made with fish instead of beans (or chicken), this recipe can be prepared in advance.

Ingredients:
  • 1 pound canary beans
  • Salt
  • ¼ cup olive oil
  • 1 pound small red onions
  • 6 garlic cloves, divided
  • 2 ají amarillo (fresh, frozen or jarred)
  • 1 tablespoon ají panca paste
  • 3 bay leaves
  • ½ cup red wine vinegar
  • 1 teaspoon ground cumin
  • Salt and pepper
  • 1 cup vegetable stock
  • 4 Iceberg lettuce leaves
  • 4 black olives
  • 2 hard-boiled eggs, cut in half
How to cook:
  1. Put the beans in a bowl, cover with water, and soak overnight. The next day drain the beans and transfer to a saucepan with water to cover. Bring to a boil, turn the heat to medium and cook partially covered with a lid, for 1 hour or until the beans are soft. Add salt to taste.
  2. When the beans are ready, heat a frying pan with the olive oil over medium heat, add, and saute 2 onions cut in thick slices, from root to top, and 3 chopped garlic cloves, together with the ají panca and ají amarillo, bay leaves, vinegar, cumin, salt and pepper. Cook for 5 minutes, then add the vegetable stock and cook for 5 more minutes.
  3. Strain the beans and put in a serving dish. Top with escabeche sauce and serve over a lettuce leaf, garnished with black olives, and, if desired, hard-boiled egg halves.

  • 3 tbsp Vegetable Oil
  • 4 pieces Fish
  • 1 cup All-purpose flour
  • 2 Red Onions ((Wedged))
  • 1 Garlic Clove
  • 1 Bell Pepper
  • 4 "Ají Amarillos" or Jalapeño Pepper ((into strips))
  • 3 tbsp Ají Panca Paste ((into strips))
  • 1 tbsp Smoked Paprika
  • 1 tsp Cumin
  • 1 tbsp Sugar
  • 1/4 cup Vinegar
  • 1 tbsp Soy Sauce
  • 2 tbsp Chopped Cilantro
  • 1 bayleaf
  • 1 tbsp Oregano
  • 1 tbsp Potato or Corn Starch
  • Salt & Pepper
  • 4 Cooked Sweet Potatoes
  • 2 Hard-Boiled Eggs ((halved))
  • 4 Kalamata Olives ((halved))
How to cook:
  1. Salt & Pepper the fish, then flour it, Pat fry it then reserve it.
  2. In the same Pan/pot add Onions, Garlic, "Ají Amarillo", "Ají Panca Paste" let it cook until onions are tender (at low/medium heat)
  3. Once onions are soft add Bell Pepper, Spices, Aromatics, Vinegar, Sugar, Soy Sauce, bring to a boil turn the heat to low.
  4. Add Fish then the potato starch diluted in water bring to a boil, adjust seasoning serve with chopped cilantro, hardboiled eggs, sweet potatoes, and olives.
