Pellet Grill Smoked Brisket

Delicious beef brisket smoked low and slow on your pellet grill. This iconic barbecue classic is chewy and rich in beef flavor, and perfect for feeding a crowd.

Ingredients:
- 10 lb beef brisket (whole)
- store-bought BBQ rub
How to cook:
- Fire up pellet grill to 225°F (107°C)
- Place brisket on chopping board, fat cap-side up. Using a fillet knife, trim the fat cap, leaving about ¼-inch of fat. Trim away any other excess fat along the brisket’s surface. Remove the silver skin from the underside of the meat.
- Rinse the brisket and pat dry with paper towels
- Apply dry rub to brisket. Apply liberally, working into any crevices or folds in the meat.
- Once pellet grill is fired up, place brisket on pellet grill grates. Insert digital meat probe into the thickest part of the brisket.
- Smoke at 225°F (107°C) until brisket internal temperature hits 160°F (71°C), about 8 hours
- Carefully wrap brisket in aluminum foil. Wrap tightly (double wrap if you need to)
- Place brisket back on pellet grill grates and reinsert meat probe. Continue to cook at 225°F (107°C) until internal temperature reaches 190°F (87°C), about 2 hours.
- Remove wrapped from smoker. Place on cooking board and leave to rest for 20-30 minutes.
- Remove foil. Slice brisket against the grain into ¼-inch-thick slices.
- Serve and enjoy

Smoking a brisket can be fairly intimidating - especially to a beginner! But I'm here to help dispel the anxiety and nerves and give you all the tips and tricks for the cooking process of how to smoke a brisket on a pellet grill. It's a labor of love that takes a couple of days - but it's worth it when you get that perfect smoke ring!!!

- 1 15 lb Beef Brisket
- 2 cups beef broth
- 1/3 cup Kosmos Beef Brisket Injection Powder Mix
- 1/2 cup favorite bbq rub

- On a large cutting board, trim fat cap off brisket with a boning knife to leave approx 1/4" fat
- Mix together 2 cups beef broth and 1/3 cup Kosmos Beef Brisket Injection Powder until powder is dissolved. It helps to warm the beef broth.
- Place brisket in a large tub. Using an injector, inject the brisket on all sides and use up all of the injection liquid
- Heavily coat all sides of brisket with the bbq rubs of your choice
- Cover your brisket with plastic wrap and refrigerate overnight
- Preheat your smoker to 225 degrees F
- If using smoke tubes, fill with pellets and light with butane lighter. Blow out flames and set on grill grates on side and back.
- Place brisket on preheated smoker fat side up
- If using a smart thermometer, insert probe thermometer into brisket. Be sure to check that your hopper is full of pellets.
- Smoke at 225 for 45-60 minutes per pound - typically overnight
- When meat reaches 205 degrees F - remove from smoker.
- Wrap brisket in butcher paper or foil and place in empty cooler to rest for a minimum of 2 hours.
- If longer than 2 hours, you may need to reheat brisket. Preheat oven to 300 degrees and place whole brisket - still wrapped - in oven for 30-45 minutes.
- Remove from wrap and slice against the grain with brisket knife
- Devour brisket!!!

- 1 whole packer brisket (16lbs)
- 1/4 cup Killer Hogs Hot Rub
- 1/8 cup Killer Hogs TX Brisket
How to cook:
- Trim thick area of fat from brisket, remove thin edge and any silver skin from top of flat. Flip the brisket to fat side and take it down to 1/4”.
- Season the brisket with Hot Rub followed by TX Brisket Rub.
- Rest brisket for a few hours before placing on pit.
- Prepare pellet grill for low and slow smoking at 195 degrees using pecan pellets.
- Place brisket fat side down on pellet grill and smoke for 8 hours.
- Wrap brisket in butcher paper, insert probe thermometer into center of flat, and place back on smoker.
- Increase smoker temp to 250 degrees and continue cooking brisket until internal temperature reaches 200 degrees.
- Rest brisket in a dry cooler for 2 hours.
- Slice into 1/4” slices starting with flat. Rotate point and slice it into slices as well, removing the edges and slicing them into cubes for burnt ends.

- Preheat pellet grill to between 225 degrees F.
- Trim Brisket removing any discolored or excess fat. Make sure to leave at least 1/4 inch of fat on the top fat cap.
- Season agressivly with dry rub of choice. and place on the pit fat side down with the thickest part of the brisket nearest to the heat source.
- Smoke brisket for at least 4 hours before checking temperature and color. Once brisket reaches an internal temperature above 160 degrees F. check the bark. If you want to wrap with butcher paper now would be the time. otherwise continue smoking
- If you wrapped the brisket you can raise the temperature to as high as 275 to finish the the cook. Once the brisket has reached an internal tempeature of 200 degrees F you will want to begin checking for tenderness.
- Once brisket is done let it rest wrapped in a towel in a cooler for at least 1 hour until the internal temp lowers to around 160 degrees f.
- Slice the brisket against the grain cutting slices about a 1/4 inch thick. if brisket slices are crumbling cut thicker, if brisket seems tough make thinner cuts.
