- 1/4 cup (55g) caster sugar
- 1/4 cup (60ml) water
- 1/2 cup (75g) self-raising flour
- 1/4 cup (35g) plain flour
- 1/2 cup (110g) firmly packed brown sugar
- 100 gram cold butter, chopped
- 1 teaspoon ground cinnamon

- Preheat oven to 180°C (160°C fan-forced). Grease deep 1.5-litre (6-cup) baking dish.
- Peel, core and quarter apples. Cook apples, sugar and the water in large saucepan over low heat, covered, about 10 minutes. Drain; discard liquid.
- Meanwhile, to make crumble, blend or process flours, sugar, butter and cinnamon until combined.

- 5 apple firm
- 3 tbs sugar
- 1 cinnamon stick medium
- 2 tbs water
- 225 g plain flour
- 115 g unsalted butter cubed
- 100 g white sugar
How to cook:
- Preheat the oven to 180C.
- Peel, core and slice apples into thick slices.
- Place into pan and add sugar or sweetener.
- Add water and cinnamon stick and cook, covered, for approximately 10 minutes until apples are soft when tested with a fork. Don't over cook, the apples should keep their shape. Set aside.
- Place the flour into a bowl and add the butter. Crumble the flour and butter using fingertips, rubbing together lightly. Keep hands high.
- Stir in the sugar.
- Place the cooked apple mixture into a medium size heat proof dish.
- Carefully add the crumble mixture on top, making sure all the apple mixture is covered.
- Bake at 180C for 30 minutes. Apples should be bubbling and the topping just turning colour.

- 1kg Granny Smith apples, peeled, core removed, roughly chopped
- 190g caster sugar
- 300g plain flour
- 165g unsalted butter
- 1 egg
- Icing sugar, to dust
- Vanilla ice cream, to serve
- Grated zest of 1 orange
- Grated zest of 1 lemon
How to cook:
- Preheat the oven to 170°C. Place the apple in a saucepan with 90g of the caster sugar. Cover and cook over medium-low heat, stirring occasionally, for 10 minutes or until the apple has softened. Place the apples and any liquid in a baking dish (about 2-litre capacity).
- For the crumble topping, place the flour, butter and remaining 100g caster sugar in a food processor. Pulse until the mixture forms coarse crumbs. Add the grated orange and lemon zest, then add the egg and pulse slowly for a few seconds to combine (the mixture will still be very crumbly).
