Grilled Chicken Fajitas
Have you ever made Grilled Chicken Fajitas? I mean, where you grill literally EVERY ingredient? This is the BEST way to do it and this recipe has the spice rub and everything!

Ingredients:
  • 1 1/2 lb. boneless skinless chicken breast
  • 1 medium onion (sliced)
  • 1 - 2 red (orange and/or yellow bell peppers)
  • 1 1/2 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp garlic powder
  • 1 tsp black pepper
  • 1 tsp salt
  • 2 Tbsp olive oil
  • 1 tsp lime juice
  • 6-8 flour tortillas
How to cook:
  1. Pound the chicken to about 1/2 inch thickness, or slice the chicken breast lengthwise.
  2. Combine all the spices in a small bowl and mix them well.
  3. Add the lime juice and about 1 Tbsp of olive oil to the spices and then rub it into the chicken.
  4. Preheat grill on high.
  5. Thinly slice peppers and onions.
  6. In a large mixing bowl, toss the vegetables with 2 Tbsp olive oil and some salt and pepper.
  7. Add vegetables to a grill tray and cook until soft and just a little charred, stirring often.
  8. Add the chicken to the grill and cook until done, flipping at least once.
  9. Remove meat and vegetables from the grill.
  10. Grill flour tortillas for just a few minutes being careful not to burn them.
  11. Slice the chicken into strips.
  12. Serve with your favorite toppings (cheese, sour cream, guacamole, salsa, hot peppers etc)

  • 1 lb boneless, skinless chicken breast filets
  • 1 clove garlic, minced
  • 1/2 tsp chipotle powder
  • 1/2 tsp cumin powder
  • 1/2 tsp Mexican oregano
  • 1/2 tsp sea salt
  • 1/2 tsp freshly cracked black pepper
  • 2 tsp olive oil
  • Juice of 1 lime
  • 1 small onion, sliced
  • 1 medium bell pepper, sliced
  • 1 tsp olive oil
  • 2 tsp worcestershire sauce
  • 8 warm corn tortillas
  • Guacamole or sliced avocado
  • Plain Greek yogurt or sour cream
  • Salsa or pico

How to cook:
  1. In a large bowl or other container, mix garlic, chipotle powder, cumin, oregano, salt, pepper, lime juice and oil. Add the chicken and stir to coat. Marinate for at least 30 minutes in the refrigerator.
  2. Heat grill to high to preheat. Turn down to low just before adding chicken. Place chicken on the grill and cook 5-7 minutes per side, or until grill lines appear and internal temperature reaches 165°F.
  3. While chicken is cooking, cook the peppers and onions. Place a cast iron skillet directly on the grill. Add oil, peppers, and onions and cook, stirring occasionally, until soft. Add worcestershire sauce about halfway through.
  4. Remove chicken from the grill and slice thinly. Add to the skillet with the peppers and onions before serving.
  5. Serve fajitas with warmed corn tortillas and toppings of your choice.

  • 3-4 chicken breasts
  • 1/2 cup lime juice
  • 1/4 cup olive oil
  • 2 jalapenos (sliced)
  • 2 tablespoons agave syrup
  • 1/4 cup tequila
  • 1 tablespoon salt
  • 1/2 tablespoon pepper
  • 1 tablespoon oregano
  • 1 tablespoon cumin
  • 2 bell peppers
  • pickled jalapenos or pickled red onions
  • 1 onion
  • tortillas
How to cook:
  1. Prepare the marinade (combine lime juice, olive oil, jalapenos, agave syrup, tequila, salt, pepper, oregano, and cumin)
  2. Reserve 1/4 cup of the marinade to the side
  3. Pour the marinade over the chicken and refrigerate 4 hours up to overnight
  4. Grill chicken over medium high on a grill pan heat for 6 minutes on one side
  5. Flip and pour the reserved marinade over the chicken (if using an actual grill with open flame, be careful because there is tequila in the marinade!)
  6. Cook chicken until internal temperature is 165. Set side.
  7. In a skillet add 1 tablespoon olive oil and saute peppers and onions over medium high heat until tender. About 5-7 minutes
  8. Assemble the fajitas with peppers/onions, sliced chicken, flaky sea salt, and pickled jalapenos or onions

Grilled Chicken Fajitas
These colorful fajitas are ready quickly—making them a great weeknight option.

  • 2 limes
  • 2 tbsp (30 mL) Chipotle Rub
  • 1 tbsp (15 mL) canola oil
  • 1 lb. (450 g) boneless, skinless chicken breasts
  • 1 medium green bell pepper
  • 1 medium red bell pepper
  • 1 large onion
  • ¼ tsp (1 mL) salt
  • 4 oz. (125 g) cheddar cheese block
  • 8 7–8" (18–20-cm) flour tortillas
  • Optional: lime, salsa, shredded cheese, guacamole, sour cream
How to cook:
  1. For the marinade, juice the limes with the Citrus Press to measure 2 tbsp (30 mL) of juice. Add the juice, rub, oil, and chicken to a medium bowl. Let the chicken marinate, covered, in the refrigerator for 5 minutes.Cut the tops off the bell peppers and use the Scoop Loop® to remove the seeds and veins.
