Ingredients:
  • 1/2 cup prickly pear fruit juice
  • 3 ounces tequila
  • 1 ounce triple sec
  • 1 teaspoon lime juice
  • 1/4 cup pineapple juice
  • 1/2 teaspoon sugar (for the rim)

How to cook:
  1. Cut prickly pear fruit in half lengthwise.
  2. Scoop the fruit into a strainer. Place the strainer over a container. Use a spoon to press the fruit into the mesh. This will force the juice out, without getting seeds.
  3. In a shaker, add ice, and all of the ingredients.
  4. Shake to chill. Let sit for 2 minutes while you prep the rim.
  5. Rub fresh lime over the rims on two glasses. Dip the rim in coarse sugar.
  6. Pour the cocktail into each glass. Garnish with pineapple or lime.

  • 2 pounds ripe prickly pears
  • 1 cup aloe vera juice
  • 1 cup white grape juice
  • zest of 2 limes
  • kosher salt for rimming the glasses (optional)
  • 1 batch prickly pear juice
  • 1 cup freshly squeezed lime juice (from 8-10 large limes)
  • 3/4 cup tequila

How to cook:
  1. Slice the prickly pears in half lengthwise. Use a spoon (preferably a serrated grapefruit spoon) to scoop the innards of each half into a 2-quart saucepan.
  2. Pour the aloe vera and white grape juices into the saucepan and zest the limes into the saucepan.
  3. Bring to a simmer over medium hat and cook for about 5 minutes, using a potato masher or silicone spatula to mash the prickly pear pieces until they are mushy and the seeds are loose and free-floating.
  4. Drain the juice through a fine mesh strainer, stirring and pressing gently to extract all the juice. You should end up with about 2 1/2 cups of juice.
  5. Cool completely before freezing or making margaritas.
  6. Cut a lime in half and run it around the rims of 4 12-ounce cocktail glasses or margarita glasses.
  7. Dip the rims of the glasses in kosher salt.
  8. Fill the glasses with ice.
  9. In a 2-quart pitcher, stir the prickly pear juice, lime juice, and tequila together.
  10. Pour the margaritas into the prepared glasses and serve immediately.

  • 2/3 cup lime juice (about 4 medium limes)
  • 1/2 a cup light agave nectar
  • 6 ounces of tequila

How to cook:
  1. Prepare prickly pears by slicing each in half, scoop out the prickly pear meat and seeds, and discard the skin. Using a fork, mash the pulp and seeds into a semi-puree consistency.
  2. In a medium bowl or glass, mix together the lime juice, agave, and prickly pear puree until well combined. Strain with a fine mesh sieve into a pitcher.
  3. Pour 1/4 of a cup of the prickly pear margarita mix into a 6 - 8oz glass over ice. Add 1.5 ounces of tequila, then top with sparkling water.
  4. OPTIONAL ADDITIONS
  5. Cayenne Sugar Rim - Before pouring your cocktail in step 3, mix the sugar and cayenne together then spread evenly onto a plate. Rub each empty glass rim with a lime wedge, then invert the glass and dip the glass rim into the cayenne sugar.
