Ingredients:
- 1 1/2 lbs boiling potatoes
- 2 onions, chopped
- 2 garlic cloves, minced
- 1 tablespoon oil
- 1 1/2 lbs lean ground beef
- 2 tablespoons flour
- 1/2 cup beef stock
- 1 1/2 teaspoons salt
- 1/4 teaspoon pepper
- 1 teaspoon allspice
- 3 tablespoons red wine vinegar
- 2 teaspoons Worcestershire sauce
- 2 tablespoons butter
- 1 tablespoon milk

- Cut potatoes into chunks.
- Put saucepan with salted water and bring to a boil.
- Reduce heat and cook until tender, 15 to 20 minutes; drain.
- Cook onions in oil in frying pan over medium heat until soft, about 5 minutes.
- Add garlic and cook another minute.
- Crumble in beef and cook until no longer pink; drain off excess fat.
- Stir flour into meat and then add stock slowly.
- Stir in salt, pepper, allspice, vinegar and Worcestershire sauce.
- Cook for 1 to 2 minutes.
- Pour into 1 1/2 quart casserole.
- Preheat oven to 400°F.
- Mash potatoes with salt and pepper and the 1 tablespoon of the butter and milk.
- (The potatoes will be quite dense).
- Spread over meat.
- Brush top with remaining butter.
- Bake until top is golden, 25 to 30 minutes.

Ingredients:
- 1 1/2 lb ground beef
- 1 small onion (diced fine)
- 1 teaspoon garlic powder
- 1 teaspoon pepper
- Salt to taste
- 1 bag frozen peas and carrots (12 oz bag)
- 3 cups frozen corn
- 3 cups brown gravy (I just make own with beef broth and cornstarch)
- 1 teaspoon rosemary seasoning blend (*see blend recipe below)
- 4 cups mashed potatoes (about 2.5 pounds raw)
- 4 ounces cream cheese
- 1-2 cups cheddar cheese for top as desired
- 1/4 cup dried rosemary.
- 1 tablespoon Kosher salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried lemon peel
- 1 tablespoon dried granulated garlic

- Ground Beef Mixture
- Brown beef until only slightly pink remaining, drain off fat, then add onion and finish browning and until onions are tender.
- Add salt, pepper, and garlic powder to taste.
- Prepare gravy (according to directions on cornstarch packaging)
- Add rosemary seasoning and mix well. Then add gravy to the meat mixture.
- Mashed Potatoes
- Prepare mashed potatoes and add softened cream cheese to very warm to hot potatoes.
- Blend well and set aside.
- Layering Shepherd's Pie
- Thaw frozen veggies if desired, otherwise add into 9x13 dish.
- Pour meat and gravy over veggies.
- Spoon mashed potatoes over the meat layer.
- Cover with foil. Place on a shallow baking dish to catch drips.
- Bake at 350°F/175°C for 40-45 minutes or until heated thru.
- Remove foil and add cheddar cheese on top. Melt til bubbly and/or crispy as desired.
- Rosemary Herb Seasoning Blend
- If the rosemary is too twiggy, crush it up a bit with a blender or spice grinder and pulse a few times. Also fine to leave as is.
- Blend all seasonings by placing in a small rubbermaid container and shake to mix.

- 1 pound ground beef
- 1 can (14-1/2 ounces) beef broth, divided
- 3 to 4 bay leaves
- 2 whole cloves
- 1/2 teaspoon pepper
- 1/8 teaspoon dried thyme
- 1 pound potatoes, peeled and cubed
- 1/4 to 1/2 cup whole milk
- 2 tablespoons butter
- 1 tablespoon minced chives
- 1 teaspoon salt, divided
- 1 cup shredded part-skim mozzarella cheese
- 2 medium onions, sliced
- 2 celery ribs, diced
- 1 large carrot, sliced
- 1 cup frozen corn, thawed
- 2 tablespoons all-purpose flour
Nutrition:
- In a large skillet, cook beef over medium heat until no longer pink; drain. Stir in 1 cup broth, bay leaves, cloves, pepper and thyme. Bring to a boil. Reduce heat; cover and simmer for 30 minutes.
- Meanwhile, place potatoes in a large saucepan; cover with water. Bring to a boil. Reduce heat. Cover; cook 15-20 minutes or until tender. Drain. Mash potatoes with milk, butter, chives and 1/2 teaspoon salt. Stir in cheese; keep warm.
- Add vegetables and remaining salt to the beef mixture. Cover and simmer for 10 minutes. In a small bowl, whisk flour and remaining broth until smooth. Gradually stir into beef mixture. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Remove from the heat. Discard bay leaves and cloves.
- Transfer beef mixture to a greased 11x7-in. baking dish. Top with mashed potatoes. Bake, uncovered, at 375° for 10 minutes or until heated through.
