This gorgeous summer fruit salad is made with stone fruit like peaches, nectarines and cherries, fresh berries and a delicious lemon maple thyme dressing. I toss the zingy citrus-ginger dressing with peaches, berries, and cherries, but other fresh fruit would be great here too.

Ingredients:
  • 5 cups fresh baby spinach
  • 5 cups romaine (cut in bite-size pieces)
  • 5 cups fresh strawberries (sliced)
  • 1/4 cup candied pecans (whole or coarsely chopped)
  • 1/2 cup crumbled blue cheese (or feta cheese)
  • 1/4 cup red onion (chopped or thinly sliced)
  • 1 avocado (diced)
  • 1/4 cup raspberry vinegar (or other light fruit vinegar or a champagne or white wine vinegar)
  • 1/2 cup grapeseed oil (or salad oil)
  • 2 1/2 Tablespoons brown sugar
  • 2 cloves garlic (crushed)
  • salt and pepper (to taste)
How to cook:

  • 1 tablespoon lemon juice
  • 1 tablespoon lime juice
  • 1 teaspoon maple syrup (more if desired)
  • ½ teaspoon grated ginger
  • Pinch of sea salt
  • 10 strawberries (sliced)
  • 2 peaches (sliced)
  • ½ cup Bing cherries (pitted and sliced)
  • ½ cup blueberries
  • ½ cup raspberries
  • ¼ cup fresh basil (more for garnish)
  • ¼ cup fresh mint (more for garnish)
How to cook:
  1. In a medium bowl, whisk together the lemon juice, lime juice, maple syrup, ginger, and salt.
  2. In a large bowl, toss together the strawberries, peaches, cherries, blueberries, raspberries, basil, and mint. Drizzle the dressing on top and toss to coat. Garnish with basil and mint and serve.
