  • 3 tablespoons unsweetened almond milk or milk

  • Butter, maple syrup, fruit, nuts, a handful of chocolate chips, a dusting of powdered sugar, whipped cream…

  • ⅓ cup pancake mix (complete, just add water version)
  • 3 Tbs water
How to cook:
  1. Combine melted butter, pancake mix and water to a microwave safe mug, mix well (can be lumpy)

  • 2 tablespoons whole wheat or spelt flour
  • 1 teaspoon Swerve, granular
  • ½ teaspoon baking powder
  • 3 tablespoons milk ((unsweetened soymilk or dairy milk))

  • ¼ teaspoon vanilla extract

  8. A toothpick inserted into the center of the mug pancake should come out clean or with small crumbs. If the pancake is still wet in the middle, microwave an additional 10-15 seconds.
