  • 1/2 cup butter, softened
  • 1-1/4 cups plus 1 tablespoon sugar, divided
  • 2 large eggs
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 2 cups fresh or frozen blackberries

How to cook:
  1. In a large bowl, cream butter and 1-1/4 cups sugar. Add eggs, one at a time, beating well after each addition. Combine the flour, baking powder and salt; gradually stir into creamed mixture alternately with milk. beating well after each addition. Fold in blackberries.
  2. Fill greased or paper-lined muffins cups two-thirds full. Sprinkle with remaining sugar. Bake at 375° for 20-25 minutes or until a toothpick inserted in the center comes out clean. Cool for 5 minutes before removing from pans to wire racks. Serve warm.

  • 2 cups flour
  • 2 tsp. cinnamon
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt

  • 8 Tbsp. unsalted butter, melted and cooled
  • 1/2 Tbsp. lemon juice, fresh

How to cook:
  1. Preheat oven to 400° F. Spray a 12-count muffin tin with non-stick baking spray and set aside.
  2. In a mixing bowl, combine the flour, cinnamon, baking powder, baking soda and salt. Set aside.
  3. Add the eggs and sugar into the bowl of an electric stand mixer with the whisk attachment. Beat on high speed for 4-5 minutes, or until thick and light in color.
  4. Set mixer to low speed and add in the Greek yogurt, melted butter, lemon juice and vanilla extract. Mix just until combined.
  5. Using a rubber spatula, gently fold the dry ingredients into the wet ingredients.
  6. Gently fold in the blackberries. Batter will be thick.
  7. Scoop muffins in prepared muffin tin (I like to use a cookie scoop for this). Sprinkle coarse sugar on top (optional) and bake for 19-20 minutes or until tops are golden and a toothpick inserted into the center comes out clean. Cool for a few minutes and then enjoy.
