Ingredients:
  • 1/4 c. mayonnaise
  • 1/4 c. sour cream
  • 1 tbsp. ketchup
  • 1 tsp. Worcestershire sauce
  • 1/2 tsp. paprika
  • Pinch of cayenne pepper
  • 1/2 c. finely grated Parmesan cheese
  • 1 tbsp. paprika
  • 1/8 tsp. cayenne pepper
  • 1/2 tsp. Italian seasoning
  • 4 sweet Vidalian onions, peeled with root end intact
  • Fresh chopped parsley, for serving
How to cook:
  1. Preheat grill over medium-high. Make sauce: In a small bowl, combine mayonnaise, sour cream, ketchup, Worcestershire, paprika, and cayenne. Season with salt.
  2. Make seasoning: In a small bowl, combine Parmesan, paprika, cayenne, and Italian seasoning. Season with salt.
  3. Cut stem off onion and place flat side down. Cut 1/2" from the root down, into 12 to 16 sections, making sure not to cut through root. Flip over and pull sections of onion out gently to separate petals. Sprinkle all over with cheese-spice mixture.
  4. Drizzle onions with oil and grill covered until tender and lightly charred, about 15 minutes.
  5. Garnish with parsley and serve with dipping sauce.

Ingredients:
  • 3 large onions
  • 1 tbsp garlic powder
  • 1 tbsp dry oregano
  • 1 tbsp paprika (smoked)
  • 1 tbsp dry basil
  • 1 tsp salt
  • 1 tsp pepper
  • ¾ cup olive oil
  • ½ cup panko (or breadcrumbs)
  • 3 tbsp mayonnaise
  • 3 tbsp sour cream
  • 1 tbsp ketchup
  • 1 tbsp horseradish
  • 1 tsp paprika (smoked)
  • 1 tsp garlic powder
  • ½ tsp salt
  • ½ tsp black pepper
  • ¼ tsp cayenne pepper
How to cook:
  1. Prepare the onions
  2. Slice the top of the onion and keep the root.
  3. Peel the outer skin of the onions.
  4. Place the cut side down, and slice from about ½ inch of root all the way through.
  5. The best way to do it is to start with the 4 even sections, then divide them evenly until they're the size you like.
  6. Flip the onions over and gently separate the petals.
  7. Make and apply the seasoning
  8. In a small bowl, combine the oil, garlic powder, oregano, basil, paprika, panko, salt, and pepper.
  9. Try to brush every petal with the mixture.
  10. Make the dipping sauce
  11. In a small bowl, combine the mayonnaise, sour cream, ketchup, horseradish, paprika, cayenne, garlic powder, salt, and pepper.
  12. Grill the onions
  13. Pre-heat grill to 350 °F.
  14. Gently place the onions on the grill and grill on indirest heat for about 45 minutes or until the onions are soft and cooked to perfection.
  15. Gently remove the onions to a serving plate.
  16. Serve warm with dipping sauce.

How to cook:
  1. Grilled onions prep
  2. Preheat the grill for medium-high direct heat grilling, about 450-500 degrees F. While the grill preheats, prep the onions. Slice the onion in half lengthwise, leaving both the tip & root end in tact. Peel away the tough outer layers & discard. Slice lengthwise through each half 2-3 more times, taking care to leave the tip & root end in tact, creating 6-8 wedges. Place the sliced onions on a small baking sheet or large plate. Drizzle the oil over top, tossing to coat in the oil. Season with 1/2 teaspoon kosher salt & ground black pepper as desired, tossing again to coat.
  3. Grill the onions
  4. Place the onions on the grill, cut side facing down. Grill 7-8 minutes, flipping the onions halfway through, until tender & charred as desired. For larger onions, the total cook time may be closer to 10 minutes.
  5. Serve immediately
