Ingredients:
  • 4 organic gala or other crisp apples (cut to approx. 2 cm pieces)
  • 1 tablespoon butter
  • 1 tablespoon brown sugar
  • ¼ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • 1 teaspoon vanilla extract
  • 1 ½ cups blueberries (fresh or defrosted frozen)
  • 3 tablespoons butter melted
  • 5 sheets phyllo pastry

How to cook:
  1. Preheat a large pan or pot on medium to medium-high heat and then add the butter and cut apples. Cook for about 5 minutes and then add the sugar, cinnamon, and nutmeg. Cook for another 5 minutes. Add the vanilla extract and then remove from the heat and transfer to a mixing bowl. Add the blueberries and stir to combine and then set aside.
  2. Here comes the phyllo. When working with phyllo, it must be at room temperature, and you must work quickly so it does not dry out and carefully because it is very fragile. Have your butter melted with a brush ready to go and leave yourself plenty of counter space.
  3. Lay one sheet out and then brush the entire surface lightly with the melted butter. Make sure you stop before the edges so the sheet does not stick to the counter.
  4. Now lay another sheet on top and repeat this process until you have 5 sheets stacked on top of one another.
  5. Now with the long side running from left to right, place filling evenly over the bottom half of the sheet leaving about 2 inches on three edge each sides to fold pastry over. Carefully begin the rolling process using two hands. Once you have completed your first roll, fold in both sides.
  6. Now butter the top of the phyllo as if licking an envelope and then finish rolling.
  7. Carefully transfer the strudel to a lightly greased baking tray and then butter the top and edges of the strudel
  8. Cut some slits in the top of the strudel to allow the steam to escape. Sprinkle with a little cinnamon and brown sugar and then bake in a pre-heated 375° F oven for 15-20 minutes until golden brown. Remove and serve warm with a dollop of ice cream or let cool and enjoy as a snack later.

  • 1 lb frozen phyllo dough (defrosted in refrigerator)
  • 1 cup unsalted butter, melted
  • 1 cup sugar
  • 1 cup water
  • 6 cups blueberries, rinsed and drained dry
  • 3 tablespoons cornstarch
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons unsalted butter
  • 1/4 teaspoon nutmeg
  • confectioners' sugar, for dusting
  • whipping cream or whipped topping

How to cook:
  1. Combine Sugar, Water and Cornstarch in a saucepan,cooking over low heat.
  2. Stirring constantly until this begins to thicken.
  3. Whie stirring well, add half of the blueberries.
  4. When this mixture become very thick, add the lemon juice, the 2 Tablespoons of butter and the nutmeg.
  5. Continue cooking over low heat until the butter melts.
  6. Remove from heat and add the other half of the blueberries.
  7. Set this aside.
  8. Butter a 13x9 glass baking dish and preheat the oven to 350°.
  9. Remove the Phyllo from the plastic wrapper, leaving it in a tight roll.
  10. Cut the dough in 1/4 inch slices.
  11. Separate and loosen the rolls into loose shreds.
  12. Place one half of the shredded phyllo in a large bowl.
  13. Gradually and lightly drizzle half of the melted butter over the shreds.
  14. With your hands, toss to coat.
  15. Place coated Phyllo dough in bottom of the baking pan.
  16. Spread all of the cooled Blueberry mixture over the layer of Phyllo.
  17. In a bowl,butter the remaining half of the Phyllo dough, tossing with your hands to coat the dough.
  18. Place this over the Blueberries layer, covering completely.
  19. Cover loosely with aluminum foil and bake for 30 minutes.
  20. Remove the foil and continue baking until the Phyllo is crispy, 25-30 more minutes.
  21. Remove the Strudel from the oven and cool.
  22. To Serve, dust lightly with confectioners sugar or top with Whipped Cream or Whipped Topping.
  23. Better yet, use both!
  24. Is delicious with French Vanilla Ice Cream.
  25. You may serve this at room temperature, or warm.

How to cook:

  2. Combine raisins, rum, lemon juice, and butter in a saucepan, heat just until it starts to bubble, turn off the heat and let cool.
  3. Combine all of the filling ingredients in a large bowl, and mix to combine.
  4. Phyllo Dough Instructions
  5. Clean your area in preparation for the phyllo dough, you need space to do this.
  6. Open the dough package, and unroll the dough. Immediately cover the phyllo dough with a damp cloth.
  7. Place a large piece of parchment paper on your work surface. Carefully remove one sheet of dough and lay it on the parchment paper. Recover the unused dough
  8. Working quickly but carefully, brush the melted butter from the center to the edges so you don’t tear the dough.
  9. Lay the next sheet of dough on top of the first, brush with butter. Repeat until you have 5 layers.
  10. On the long side of the dough, lay a row of apple filling the thickness of a soda can along the entire length.
  11. Using the parchment paper, carefully roll the dough into a cylinder, brush the outside with butter.
  12. Before baking, slice the top of the dough halfway through, into serving-sized portions. If you try to slice it after it bakes the dough will crumble and ruin your presentation. Refrigerate well covered in plastic wrap until ready to bake.
  13. Preheat the oven to 350°F. Bake for 40-50 minutes rotating the pan every 15 minutes until the dough is a crisp golden brown.
  14. To serve
  15. Sprinkle with confectioners sugar, serve with half-melted vanilla ice cream, and fresh berries.
