- 1 large cauliflower, steamed till crisp o r tender and broken up into small florets
- white pepper
- 1/2 cup grated parmesan cheese
- 1 cup shredded cheddar cheese
- 1 cup shredded swiss cheese
- 1 1/2 cups half-and-half, beaten with
- 2 whole eggs
- 1/2 cup dry breadcrumbs, lightly fried in
- 2 tablespoons butter

- Lightly butter a 13 X 9" pyrex baking dish and put in cauliflower.
- Season lightly with white pepper and sprinkle all the cheeses over.
- Beat the eggs into the half and half (you can also use 1 1/2 cups milk, 2 eggs and 1 tblsp cornflour as a sub). Pour over cauliflower-cheese mixture and top with buttered breadcrumbs.
- Bake in a 375F oven until lightly golden-brown.
- Allow to cool slightly before serving.

- ½ small onion, diced
- 2 teaspoon xanthan gum
- 1 c cream
- 1 c sour cream
- ½ lb bacon, cooked, rouch chopped
- 2 c cheddar, shredded
- ½ c parmesan, shredded
- 2 heads Cauliflower, rough chopped
- Salt & Pepper to taste
- 1 teaspoon Garlic Powder
- Green Onion or Scallions, chopped

- Preheat oven to 400 degrees
- In a large stock pot, bring water to a boil. Cook cauliflower until fork tender. Remove from water and set aside. Wipe out the pot. Return to heat.
- Saute onions in 1 tablespoon butter. When onions are translucent, slowly add xanthan gum. Stir to combine. Slowly whisk in 1/2 the cream and all the sour cream.
- Stir in seasonings, bacon and half of the cheddar. Remove from heat. Set aside.
- Add remaining butter and cream to the cauliflower and mash. A hand mixer works really well to get it smooth.
- Spread cauliflower mash into a buttered casserole dish. Pour cheese sauce over the mash.
- Top with remaining cheese, parmesan and green onion.
- Cover with aluminum foil and bake for 15 minutes
- Remove foil and bake additional 5 minutes

- 1 head cauliflower, cut into small florets
- 4 tablespoons butter, divided
- 2 tablespoons all-purpose flour
- 2 cups milk
- 1/4 teaspoon ground nutmeg
- Salt and pepper to taste
- 1 cup Gruyere/Swiss cheese, grated and divided
- 1/2 cup Parmesan cheese
- 1/4 cup breadcrumbs
How to cook:
- Over medium-high heat, bring a pot of salted water to a boil and blanch the cauliflower florets for 5 minutes or until al dente. Drain completely and set aside.
- Melt 2 tablespoons of butter in a large pot over medium-low heat.
- Add flour and whisk constantly for 2 minutes to make a roux.
- Pour in milk and bring to a simmer, whisking continuously to remove lumps until sauce thickens, about 10-15 minutes.
- Remove from heat and season with salt and pepper to taste, nutmeg, 1/2 cup Gruyere/Swiss and Parmesan cheese.
- Pour 1/3 of the sauce in a 1 1/2 quart baking dish. Top with the cauliflower and pour the rest of the sauce over it.
- Combine breadcrumbs with remaining Gruyere/Swiss cheese and sprinkle on the cauliflower.
- Melt 2 tablespoons butter and drizzle over the casserole.
- Bake at 375°F for 25-30 minutes or until the top has browned.
- Allow it to cool slightly before serving.
